Bubbemeisse: Yiddish: old wives tale; bullshit.

Food and cooking and eating and especially drinking are filled with traditions that make no sense, prohibitions that are just silly, and some things that devolve into nonsense when questioned.

My favorite is the absolute nonsense about mixing different kinds of alcohol. Depending on whose nonsense you are hearing, it could be that wine and beer are okay, but never drink hard alcohol after beer. or is it, if you start with wine, don't drink beer, but hard alcohol is fine? Or maybe even, if the moon is full, never drink schnapps and then a double IPA?

What is really going on is that people get hammered, feel like crap the next morning, then try to fool themselves that they didn't over-indulge and that it was a specific combination and order of the alcohols that did them in. Sure...drinking sweet drinks may make you feel shittier than just shots of vodka, but I doubt those drinks have any more sugar in them than a cola or a glass of orange juice!

Pro Tip: It's the alcohol* that gives you the hangover.

So, what are some other myths about eating and drinking that fall apart under even cursory examination? Any family silliness that you are willing to share? Something taught to you by that wise senior on your freshman dorm floor?

* Yes, I know, there are other chemicals in liquor that may contribute -- fusel oils and other byproducts of fermentation -- but face it, it's the booze, not the impurities!

We all have enjoyed mocking the current corporate fad of fake meat, but I wonder where they think all of the demand will come from, if not from current customers of other fake foods? Sure, tofu has its place, in fact I eat tofu all of the time...at least once each year when I get some really good spicy Korean tofu soup from a local take-out joint.

But how many Americans are going to pay a significant premium for fake meat when the real thing is available in vast quantities at every quality and price level? Is the goal similar to the insanity of electric cars? Are they going to push for government subsidies so that America will finally dip its toes in FrankenMeat?

That sounds ridiculous, doesn't it! So how many of you will bet against it?

Can You Really Only Eat Oysters in "R” Months?

I'll eat oysters in all months, but I have heard this article's premise, that bacterial and viral growth accelerates during the warmer months. So when I do eat oysters I will tend toward cold water versions, but that is pretty much all of the time. But cooked? That is another issue entirely. If you haven't eaten a New Orleans roasted oyster you haven't lived.


Yup! It's smelts season in NJ...at least at the Greek restaurant last night. Damn, they were great. A big plate of crispy little buggers with a bit of lemon squirted on them! And for an added pop we dragged them through the grilled octopus dressing, which was nothing more than olive oil, lemon juice and some browned garlic.

I think that Greek food is an underappreciated gem. We ate some fabulous stuff last night (probably too much), and the bill was embarrassingly small. And not a complicated dish on the table.

Marvelous Gigante Beans in a very light tomato sauce, spectacular head-on prawns in a simple tomato and spinach sauce (who knew?). And several other dishes that were just good eating.

Maybe we are spoiled because there is a good-sized Greek community in the NY area, but if you ever have the chance to eat good Greek food...grab it!

Chip shop customers queueing around the street for 1,000-calorie deep fried butty

A "butty?" Brits are weird people!

It's just a big pile of potatoes and gravy stuffed into a bread pocket, then battered and fried. it's not particularly appealing, and honestly? It sounds sort of boring. But for £2.80 (about $3.95), it's a quick and filling meal.

I also wouldn't "queue," which in civilized tongues means "line up," for fast food. it's like the maniacs who lined up for the Popeye's chicken sandwich. Come on folks; it's fast food!

What the hell is Machaca? Apparently it is ground beef jerky that can be used as a topping or perhaps even as an addition to sauces and stews to add some beefy punch. It is an interesting idea, but I keep thinking, "Why wouldn't you just est the jerky?'

Yes...I love beef jerky. Especially my friend Andrew's beef jerky, which is the best I have ever had. And the bastard hasn't made any in a long time. Or maybe he has and is holding out?

They are some pretty famous chocolate chip cookies, but for some reason they have been elevated beyond all reckoning to some place above the heavens, where only the Titans live and eat.

Yeah...it's just a big fat cookie with some nice big chunks of dark chocolate. And don't get me wrong: I approve of that sort of thing! And I will be playing with the recipe from the video so I can make my own version. There are some interesting twists, and I will definitely be stealing the addition of egg yolks, because extra richness is rarely a bad thing, but in the grand scheme of things, homemade chocolate chip cookies are pretty damned delicious, even using the recipe on the back of the Nestle's chocolate chip bag.

Wait...actually that is an excellent recipe and the one that I use all of the time. So this newfangled hipster recipe had better turn out some spectacular cookies, or I will be mocking it early and often.

20 Rich liberals tend to be foodies, so I really don't think they're gonna go for frankenmeat even as a holier-than-thou symbol.  Yes, they will try to force the plebs to eat it but America is a big place and there's a lot of cows so I don't see enforcement being very effective.  Those shady roadside meat trucks might see their reputation rehabilitated though.

22 Classic cheap chip butty is nothing more than fries on a hamburger bun with a huge dollop of mayo or tartar sauce. You can do gravy, ketchup, vinegar, etc., but mayo is the preferred bang for buck. It's basically what you buy when you can't afford fish and chips, or when you need some extra oomph on top of fish and chips. Very much a northern thing too.

38 Trying something a BIT different. Normally I do a roast (beef or pork, usually) and make up a slurry of olive oil, salt and pepper, then plop the meat in and roll it around.
Today is pork roast, so I added garlic powder, onion powder and d ash of paprika.
Here's hoping it works.

Tonight's dinner is an "Hmart meets American tastes" special.  I bought 2lbs of their marinated beef chuck tender.  I LOVE their marinated meats b/c they are sliced thin and tenderized, so my GI never has issues.  And they have different Korean marinades on their beef, pork belly (another winner)/ribs, and chicken.
So, I'm making a Korean beef and veg stir fry.  A whole sweet onion, 2 green onions, 1 bell pepper, 1/2 lb of shredded carrots, 3 sliced celery stalks, grated fresh ginger and garlic and salt, and my one Hmart veg -  a whole package of King oyster mushrooms.  I precook the veg b/c my fam likes stir fry veg "less crisp and more cooked" and then I'll just toss the cooked veg in with the beef and marinade.  In about 8-10 minutes, we'll serve it over white rice with a sprinkle of fresh garden cilantro with some grapes and raspberries (was gonna be watermelon, but we lost the raspberries in the fridge, and I refuse to let them go bad).

71 Tonight's dinner is homemade spaghetti sauce with 1lb of hot Italian sausage, 1 lb ground sirloin, mushrooms, 1015 Texas Sweet onions, fresh crushed tomatoes, and Contadina tomato sauce, with fresh oregano, garlic, basil & thyme. A nice crusty loaf of French bread and a salad of fresh greens. It is simmering now and smells wonderful.

103 It is very difficult for me to get seriously plastered, much to my friends' chagrin.  A birthday tradition was once held among my closest circle of friends when we lived closer together: whoever the birthday boy was, he was getting drunk on his birthday, and all of us would buy for the birthday boy.  Designated driver taken care of so there was NO excuse.   So it was my turn and about $120-150 of booze later...I was shooting pool better.  I was in NO shape to drive, but I was otherwise unfazed.  I remind my friends of this from time to time, and these many years later they are STILL pissed about that. The last time I was drunk was over Labor Day weekend 2006, and I staggered home from a heavy night of drinking which began with nine beers and proceeded into 5 glasses of hard liquor, so I was already loaded when the shots began.  The next morning...no hangover, no headaches, none of the usual things associated with hangovers, BUT...if I got out of bed, the room began moving.  So most of the day was spent in bed with occasional tests of my sanity.  Once I sensed the room stopped moving I was OK.  Since then?  Not so much alcohol, though I do knock down two bottles of wine every New Year's.

It takes longer to get drunk off of beer, unless you are shotgunning it, then say shots.

So, if you do your shots and then drink beer you are likely to drink less alcohol versus the reverse.

Beer is likely to make you feel full as well, since the alcohol content is comparatively low.

They look good from the outside (firm, hard & smooth on the outside - no sign of mold).  Slice it in half and the middle 20%-30% is dark brown or even black sometimes.  Been going on for a while.

What type of pork?  Some will work great in crockpot...some not so much...with pork, the fattier it is, the better it will do in a crock stew.  You can strain the fat or do as I do, keep it b/c pork fat is awesome and make a cornstarch slurry to bring the stew together (and use a TON of veg in the stew) - that's another thing.  A little pork will go a long way in a stew, especially if you keep the fat...

131 Yesterday, I BBQ'd beef back ribs and a chicken.
Everything came out fine but- I had a sort of revelation about my future BBQ cooking.
While there was nothing wrong with the beef back ribs, I simply didn't enjoy eating them as much as I would have a nice, thick, well-marbled steak or a nice tender smoked brisket or smoked prime rib or beef fajitas or a juicy cheeseburger.
So, from now on when I want beef, I simply fix one of those.  Beef ribs are now out of the picture.
I feel the same about Tri-Tip.  I'd much rather have a nice ribeye or brisket.  There's nothing special in my book about that mutant half-steak/half-pot roast cut.  As I'm pretty sure the Bible says:
"I know thy works, that thou art neither steak nor pot roast, thus I spit thee from my mouth!!!"
And when eating, one certainly doesn't want to go against the Bible.
Be better BBQers.  Be better.

I do stir-fry a lot, because the foods you can use are various and many, and it's hard to totally mess up. I try not to overdo the seasoning or sauces. Simple is better. It's also very easy to cook, often just one pan, twenty minutes. Great for cooking after work.

Give it a whirl.
Stiletto Cocktail
1.5 oz bourbon* 1.5 oz amaretto 1 oz fresh lime juice
Shake with ice.  Strain into glass.  Garnish rim with a fresh lime wedge. Drink!
*I suggest a higher proof or cask proof bourbon.  You get a better flavor balance cuz the amaretto can overwhelm a mild flavored bourbon.  Or, you could always cut the amaretto amount, but it's simpler and better to just go with a higher proof.

170 141: I found this to be quite true, and I figured out how to do this from a bottle of bulgogi sauce on sale at the store.  It said "1/3 bottle for every one pound of protein".  RANT: What the hell is wrong with saying "meat"?  Anyways, I did that, and I had two pounds of stir-fry cut beef, WITH some accompaning veggies.  Green pepper and onions in strips.  I emptied the beef and veggies into ziploc bags and used the bottle as instructed for an overnight marinade, cooked it in a pan the next day after work, and pulled out the rice cooker for some good quality rice.  Hit the spot! So now I have been using the same strategy with different sauces.  I used spicy Korean so far and have two more sauces in the pipeline.  It will wait for the stew to be gone through.  (The problems of being single and setting up your meals accordingly...)  But I am digging the stir-fry.  Good stuff.

Posole's great.  The recipe I use is a bit different than your's but in a similar ballpark.

If you make posole, don't forget the garnishes like sliced radishes, lime, cilantro, sour cream, green onion, etc.  They really make the dish.

198 pork chili verde is pretty easy to make.   Blister tomatillos and poblanos under a broiler or a hot fire, peel, add onion, chicken stock and lime juice to pork shoulder and let it do its thing in the oven at 300 for 5-6 hours.  You can play with different chilis, but you have to roast them first to get the skins off.  I also take out the seeds.  
Serve with lime, fresh cilantro, sour cream and cojita.

I'm far from Baptist and even farther from hostility to alcohol.    Next to my laptop, in fact, is a small wine fridge with four wine bottles.  

If I buy alcohol, it's beer or wine.  I never cared for most hard liquors.  I only started drinking vodka when I discovered kamikazes, for instance.  I do not understand the fascination with tequila.  Whiskey I'm OK with.  Sake...well, I need good sushi with that.  Typically if I drink hard liquor it's at a bar or in (rare) social situations.

Never use a pork loin stew. It'll turn out like overcooked chicken breast.

Smelt fishing is a tradition here in Chicago..  Every April, scores of fishermen camp out along the lakefront harbors after dark for the smelt run..

It's funny when my wife makes smelt here..  She has to trim all the fins and tails!  I'm surprised she doesn't try to debone them!

233 Everclear is the quickest way to do an homemade infusion with fruits, spices, botanicals, etc. Mix everything in a mason jar, swirl every few days, and within two weeks, you're all good. Vodka basically does the exact same thing at half speed. You can always dilute Everclear after the fact if you wanna bottle something near standard 40% ABV.

They have their Coleman lanterns..  and some have their Coleman stoves for cooking up a batch of smelt right there!

252 The photo of smelts reminded me. Several times a year my grandparents got a huge amount of smelts from the fishmonger, less than 2 hours from the ice on the trawlers to their kitchen. They were about the size of sardines in a tin. The heads were cut off and they were simply fried in olive oil with a bit of salt and served piled on platters with plenty of lemons to squeeze over them for our combined families. They came out crispy but not overcooked, no problem with bones. We had Greek olives and hummus and pita bread with them. Damn, they were tasty! This was a spring/early summer thing. 

They did a similar thing with chicken wings rubbed with olive oil and salt and baked in the oven. So simple and so tasty. These weren't the meatier ones seen today, just regular size. My grandparents were not stingy but were frugal, so I assume the wings were really inexpensive. But they were delicious.

Everclear maxes out at 95% ethanol, 5% water. As an emergency gas substitute, I wonder about the effect of ethanol on gaskets and coatings, and the effect of 5% water. Maybe use it in an emergency, if you can immediately fill the tank with gasoline when you teach a station, and add some isopropanol gas dryer.

268 Everclear is the quickest way to do an homemade infusion with fruits, spices, botanicals, etc. Mix everything in a mason jar, swirl every few days, and within two weeks, you're all good. When I worked at a Medical Center storeroom in the 70's, we had access to food grade ethanol.. same as Everclear..
We had a lot of recipes going around from one department to the next..
my favorite was Milk Liqueur
Oranges, lemons, vanilla sticks, sugar and ethanol and milk go into a big carboy.. shake it every day for a few weeks..
Then strain it - since we had vacuum ports we could use vacuum filters..
the result was a clear, citrusy mellow liqueur..  I would bottle it for Christmas presents for friends!

269 I have discovered guajillo peppers.  Yes, I'm a little slow as they are the second most used pepper in Mexican cuisine.  Anyway,  I ground some fresh and added them to Mexican  Crema with a pinch of cumin and a bit of garlic.  Made an outstanding dipping sauce for the Argentine shrimp.  I  want to do  gravy  type sauce to put on pork next

282 If you can get ahold of some toluene, it would make a better emergency gas substitute than ethanol. Gasoline normally has some toluene in it.  I've used a liter of toluene mixed with about 20% dry IPA to get to a gas station. The IPA is so it will burn a little cleaner, toluene tends to make some  carbon when it burns.

292 Freshman year at UC/SD we'd hop on over to Tijuana (which was actually, close to an hour trip when you factor in driving off campus, getting on The 5 (being So. Cal., need the definite article), driving to San Ysidro, parking at the tire store on the border, and walking the mile to Avenida Revolucion (or whatever it was called back then).  Before heading back, we'd get  6oz-ish plastic bottles of "Puro de Cana", which was 192 proof ethanol, and put them in our socks so we had nothing to declare coming back across the border....  One night I had 1 (one, uno) shot of that stuff.  Ugh.  That was all I had to drink that night and hours later after I went to bed, I woke up and threw my guts (including the lentil soup I had for dinner) up.  I didn't have lentil soup for 20 years after that.

296 Probably already covered, didn't check, but machaca is Mexican left-over egg scramble, basically.  Eggs, chiles, tomatoes, onions, and shredded beef.  Best Mexican beef is shredded - range-fed, not as tender as industrially-raised, but tastier.  Ya take your leftover onion and green chile and saute them with the shredded beef (usually already marinated and slow cooked), add eggs.  Great by itself, filling for a burrito in border Mex food.

298 Smelt!  Oh how I remember smelt!  My father got convinced by his brother and other n'er-do-well fishing buddies to go smelt fishing one year.  He brought home a huge harvest late at night, pounds of the damn things, which he then expected my mother to cook.  My mother was not a great cook, she did her best, but those smelt!  The name just said it all.  They were VILE, even the dog would not eat them.  She ended up burying them in the garden for fertilizer (remember the Pilgrims?).  Thanks for reminding me.

With my allergies, I do this for dairy and tree nuts.  If you want an easy way to avoid soy in oil, just buy olive and canola oils (cook with the olive and bake with the canola - although you can cheat and switch - olive oil cakes are the bomb!).  NEVER buy vegetable oil b/c that's almost always soybean oil these days.

It was all I could manage. The boy had fried clams-which was a take out item and FenSpouse is having frozen ravioli with sauce later on which he is fixing himself. 312 Guajillos, mulatos, anchos, chipotles, cascabel, japones - all dried versions of fresh chiles, all great, and as Walter said, if you start to try real Mexican sauces (based on these), you'll be happy.   There are several chiles unique to Oaxaca that are relatively difficult to get (you won't find them in most Mexican stores, even), which are the basis for the "seven moles of Oaxaca".

There are also distinctive Andean dried chiles from Peru, which have a fruitier taste and often less heat.

IIRC capsicum (chiles) are believed to have originated in the Andes.

316 Ben Had: Drying really brings out the earthiness of guallijo. Other kinds of dried chiles tend to be fruiter or more abrasively spicy. Guallijo are a very nice middle ground. It's a different cooking experience compared to fresh. Much more concentrated flavor. You'll end up closer to a mole type sauce than a salsa fresca.

The dried chiles generally have a very different, much deeper and more intense flavor - sometimes just a different flavor.  For example, jalapenos can be dried in various ways, in one case (chipotle) yielding a very smokey flavor profile.  Fresh chiles have that fresh, green, capsicum flavor, whatever their heat level.  Dried often have a very different taste.

And you don't eat them as is.  Toast, soak, grind/pulverize, then sometimes sauteed and always combined with many other ingredients, to produce a sauce.  Or, of course, used as powder, just grind the dried chiles.

321 Growing up in Arizona,. So Cal, and living in both & New Mexico - machaca is never ground beef that I've heard of. It's a shredded beef taco/burrito filling made out of sun dried/dry roasted beef (carne seca) that is re-constituted with water & chile-infused oil (plus some spices) and fork-shredded, then slow cooked. It keeps a texture that is less mushy than regular stewed and shredded beef.

It was all I could manage.  The boy had fried clams-which was a take out item and FenSpouse is having frozen ravioli with sauce later on which he is fixing himself. We usually eat together on Sunday and some other evenings but not tonight.I don't know if anybody else has this problem, but we are sometimes on different schedules. FenSpouse doesn't eat in the morning, will have cereal at 9;30 a.m. when he comes home from the 1st bus run. I am hungry at 12:00 for lunch Then FenSon who gets up late is hungry for lunch at 1:00. When FenSpouse comes home at 2;30 he wants lunch so by the time everybody else is hungry about 5:30 FenSpouse is not. Drives me nuts sometimes, and I just say "You're on your own guys. I am not making 5 meals a day at different times." And yes. they are very dear and I love them. Still drives me nuts.

That's called crockpot night or cold dinner night here.  I've got some cold dinners - chicken sesame noodles, chicken salad, main dish pasta salads, shrimp salad, etc that I'll make homemade fruit muffins and a green/fruit salad to go with - and lots of crockpot stuff.  Usually, if it's a crock night, I make sure the crock is ready by 3-4pm, so those who need to eat early can grab it, and those who don't can wait.  5pm is dinner pretty much every night, so it's easy to know if we have a conflict (we do have one Wed nights this spring, so I have the above two plans in place, plus an extra "frozen pizza" option, since 3 folks leave early, they can share one (with my spouse eating lightest) and my cold sides, and then the other 2 share one and I have my own vegan one...then when the spouse comes home still hungry, he finishes my vegan one)...

330 Gonna use up a packet of commercial BBQ dry rub that's been sitting here for a while tonight.  Nice tri-tip.  Slow cooked, mostly indirect heat, on the grill, with a brief high-heat phase to char up the surface.  Shishito peppers grilled and tossed in soy and sesame oil, green salad with romaine from the yard (been a weird year, several are bolting now, need to dig 'em out and use the usable parts right away).

If it's 100% canola, it has no soy (and if it does, then someone is skirting the rules).  And I feel for the no soy - I don't think I could handle that allergy.  Dairy and tree nuts are enough, b/c I can still eat tons of Asian cuisine, and as you said, soy and especially soy lecithen is in almost anything processed/prepared.

335 Inspector Cussword is right, the beef in machaca, properly done, is carne seca.  I think most Mexican restaurants just marinate/tenderize, slow cook, and shred cheaper cuts of beef for it - it turns out much the same.

Actually need to find a source of good carne seca here locally, but for making feijoada, the Brazilian black bean and meat stew, which I've been meaning to make, again, for ages.

There's a very quick, but good overview of how to do a dried chile paste between 0:30 and 2:30. He leaves out all the extras like garlic, fresh or grilled onions, charred tomatoes, green herbs, vinegar, etc., but it's that's the basic starting point. Only dried chiles and water. Extra fancy steps would be running the paste through a fine mesh strainer, pushing out all the juice from the fiber with a back of a spoon, then pan frying (simmering) the sauce with a little oil or butter. From there, you can use the blend as a marinade, stewing sauce, salsa base, or pretty much anything. Countless videos on YouTube if you search for "how to use dried chiles". It's a fun rabbit hole if you like cooking though.

I always fry my soaked/ground chile paste before using, I think it breaks it down in a way that's important for flavor.  The traditional mole poblano uses just the "trinity" of ancho, mulato, and guajillo chiles - plus, as I used to make it, about 30 more ingredients (all spices, seeds, and nuts toasted first).

Gotta make that again, too.  I used to bring in leftovers to one job for group lunch events and friends from throughout the building would ask me about "any more?" for months after.  Most amazing thing I've ever made, easily.

376 Smoked jalapeños are known as chipotles. If you can ever find smoked serrano chilis, they are the bomb. Since I haven't found any in Texas, I generally do some one a year or so. They keep well in a jar. Unlike carrots, they make an interesting addition to chili.

I have a basement room that stays pretty constant at 65 which is a little warm and probably a little dry.
Plan B is an old refrigerator that still works but we dont use otherwise.  if I can get it to hold 55 or 60.  I have two weeks to work it out during the salt cure phase.

I think there are too many variables for a clear definitive Fauci like answer, but pollen allergies are local, and bees are involved in local pollens, so it is certainly a credible myth. When we kept bees, we always felt that our family's seasonal allergies were very mild to non-existent!

Of course now that we always wear at least three masks, we don't have allergy problems anymore!

427 Just pulled second batch of home cured bacon from the smoker.  22 pounds this time.  Last time I made 11 pounds and gave most of it away, this time that ain't happening.


7 days dry cured in the fridge turning every day.  Pulled it out this morning at 5 am and let it sit for 8 hours and in the smoker it went in two batches to smoke with apple wood until it hit 145 degrees. 


It's amazing what you can do with Morton tender quick cure and brown sugar.  You can't buy that kind of flavor in a grocery store.

431 The only time drinking made me hard we were sampling fancy liqeurs. I probably had a dozen sips each of a different variety. Didn't get drunk, but my stomach rebelled. I do think mixing it up like that was directly responsible.

435 This will probably be Willowed since the Gun Thread is up. Doing a reverse sear on a $10 ribeye. Yesterday, I rubbed it with McCormick Montreal Steak seasoning, let sit 2 hours, wash off seasoning, paper towel pat dry, ziplock bag it, put in fridge. Today, take it out and bring the meat to room temp. Oven to 225*, probe in, meat on cooling rack on foiled cooking sheet, add a little coarse salt on top of the meat, cook to meat internal temp of 125*. Will then develop crust with butter, garlic, and rosemary, on the stove in a pre-heated cast iron skillet. Rest meat 10 minutes under foil. *I bought the probe temp thingy because I learned about it here!*
Serve with Instant Pot broccoli. Set to Pressure Cook for 1 minute, cook, let it sit 2 minutes under pressure, release pressure, remove, add massive butter, generously spice with Sabatino Tartufi truffle and parsley sea salt, and Adams Reserve white wine and garlic butter spice.....Yum, the best broccoli evah!!!
