— DrewM Let's start with the bottom line...NY State Assemblyman Felix Ortiz (he of the no holding a cellphone while driving ban) is a putz.
Now Mr. Genius wants to ban the inclusion of salt in all food prepared by restaurants.
Ortiz admits that prior to introducing the bill he did not research salt’s role in food chemistry, its effect on flavor or his bill’s ramifications for the restaurant industry. He tells me he was prompted to introduce the bill because his father used salt excessively for many years, developed high blood pressure and had a heart attack.“I think salt should be banned in restaurants. I ask if a dish has salt in it, and if I does, I get something else that doesn’t have salt,” Ortiz tells me, before going on to say that he has eaten, and expects he will continue to eat, among other things, ham, cheese and bread in restaurants, all of which contain salt.
...Regardless of the intent, and accepting its sponsor’s claim that it is part of his campaign to improve the public’s health, the bill exhibits profound ignorance not only of matters of taste — literally — but also of the chemistry of cooking.
“It’s a preposterous notion,” says baker extraordinaire Michael London, whose Mrs. London’s Bakery has been a Saratoga Springs institution for more than three decades. “Not using salt would make breads insipid and anemic,” London says. Besides lacking flavor, saltless bread would also have different texture, density and other characteristics as a result of its altered chemistry, London tells me.
In food scientist Shirley O. Corriher’s “CookWise: The Hows and Whys of Successful Cooking,” she writes that even the minimal salt used in baking — as little as one-third of a teaspoon per cup of flour — plays four crucial roles in the development of dough: It enhances flavor, controls bacteria, slows yeast activity and strengthens dough by tightening gluten.
“The small amounts we are dealing with … are not enough to add significantly to dietary salt intake,” Corriher writes.
And on and on and on. In short, it's simply impossible to cook without salt. This jackass doesn't know anything about the subject but thinks he knows everything he needs to because he's...an elected official and he cares.
You can say this is crazy and it will never pass (and you'll probably be right) but look at all the other insanity these people do pass (smoking bans, tans-fat bans, etc). Sure the exceptionally crazy one may get thrown out, or not, but it makes the next limitation on freedom and choice look moderately sane by comparison and a bit easier to pass.
It's time we kick these nosy bastards out of office and fire at least half of their bureaucratic enforcers.
Life is a dangerous thing and it will end in death. No amount of government intrusion into our lives is going to change that, we should stop pretending otherwise.

He tells me he was prompted to introduce the bill because his father used salt excessively for many years, developed high blood pressure and had a heart attack.
As I said earlier today, that premis is absolute crap. The concensus from the modern studies that I have read after I had my heart attack was that salt has a negative impact of heart discease in only two instances. First if you have congestive heart failure already and second if you are "salt-sensitive" (most people are not).
I did an experiment when I first got out of the hospital in which I took blood pressure readings hourly all day long with a no salt diet. The next day I ate salt heavy stuff all day like potato chips etc. and took blood pressure readings hourly. There were no appreciable differences in blood pressure for the high salt diet vs the low salt diet.
In short, not only is this got an asshat, but he is a stupid and uneducated asshat as well.

Regulation-by-hunch. Welcome to the nanny state.
This reminds me of the late 1970s, when all car speedometer displays simultaneously adopted a max reading of 85 mph. When a Car & Driver columnist asked DOT what sort of research had been done before issuing this regulation, he got shrugs. It was just a hunch by some people who figured it would be safer.

Another food ban based on junk science.
So his dad died - he thinks - from excessive salt use? My family uses salt with abandon, just throwing salt on EVERYTHING even chocolate chip cookies, and none of us has high blood pressure.
So when I get elected to Congress, I'm going to introduce a bill that requires every U.S. citizen to meet their minimum daily salt requirement, so they can be healthy just like my family.
Because that's how we roll nowadays, it's all about projection and narcissism.

This mentality is pervasive. I met a neighbor last week who just moved into a corner house. The side street is a throughfare, a two lane with a moderate amount of traffic. I asked him how he liked the neighborhood.
"Could use some speed bumps."
He spends $200K on a house on a busy street, then wants the government to regulate everybody else so he can like it better.

I was having a conversation about this the other night with a random dude in a bar (along with a bunch of other inane topics). He thought it was great. "I mean, we can always add more salt to our food, right? People hated the smoking ban when that started, but we all love it now, right?"
On the bright side, he was originally from Texas, and just loved New York (though he couldn't figure out why it was so much cheaper in Texas). To the great people of Texas: congratulations, the migration isn't only one way. You lost an idiot.

Notably NaNO2, the magic chemical that makes Bacon, sausage, hot dogs, pastrami, bologna, most beef jerky, salami, ham, and many many more glorious cured meats. Let's not forget NaNO2's bigger brother NaNO3 the chemical responsible for pepperoni. No cured/smoked meats? They really are just asking begging for torches and pitchforks.

Posted by: Editor at March 11, 2010 07:37 AM (pUfK9)
It's not a question of being natural. The problem with sodium is that if you have an excess, then it acts to create a potassium imbalance. Normally potassium levels are high within cells, but there's a Na-K channel that moves the two ions back and forth. If these channels get messed up, it affects muscle and nerve function.
Healthy people's physiology allows them to regulate these things, so they can handle occasional spikes in "salt" (just like healthy people can handle spikes in dietary sugar that would kill a diabetic).
If you are a person who needs a special diet, maybe you should be cooking for yourself at home and not eating out. Or are the Ds saying we have a constitutional right to eat out?

In actuality there are two major causes of high blood pressure and neither one of them is under control of the individual. Those are age and heredity.
Other causes that are under control are weight, smoking, and exercise. I suspect Mr. Ortez the elder was overweight, smoked, and got little exercise.
I suspect that the younger Mr. Ortez, even with his stupid no salt diet will also develope high blood pressure and have a heart attack because he is stupid and thinks DCing the salt will save him.

My dad has a story about state nursing home regulators who tried to ding the local facility for serving bacon and eggs to one of his patients every morning for breakfast, since that could potentially "reduce the quality of life" with the cholesterol. Dad's point--the man was in his 90s, wife dead, kids dead or scattered, wheelchair-bound, limited eyesight, stuck in a home with no booze or loose women--bacon and eggs was about the only "quality of life" the poor guy had left. Let him enjoy breakfast.
And this would have been 20 years ago. I can only imagine how much worse it is now. Shut the place down if you find bacon on the premises...

Wrong.
As someone on a low sodium diet, I can assure you it is very easy to cook without salt and have food which is extremely tasty. While salt does play certain other roles, it is essentially using as a seasoning. You simply find other seasonings that add flavor to your food. It's not that hard. There are all kinds of cookbooks and websites filled with salt-free recipes that are tasty.
I do understand his point while I disagree with his methods. The average person needs about 2000mg of sodium a day (one teaspoon of salt is about 2300mg.) The average American takes in about 8000mg of sodium a day. Most of that is hidden in food we eat that we don't think of as having sodium. Start reading labels. You will be very surprised what you see.

Someone should put a cigarette out on this shitheel's forehead.
And then douse the wound with salt.
Posted by: Dack Thrombosis at March 11, 2010 09:25 AM (P33XN)
There's a difference between what the average person needs and what their physiology can safely tolerate. The fact remains that most people have no difficulty managing their sodium and potassium balance.
Most people "need" 20 minutes of exercise a day. Many people get more than that and many of those people wind up with exercise-related injuries. Should we dictate who can run marathons and how often?
My husband had a blood glucose problem which we got under control by taking responsibility for what we eat. Part of that involved reducing dinners out.
You have a right as a consumer to not be lied to about what you are buying, but I don't think you have a right to ask a Chinese restaurant to stop cooking with soy sauce and you certainly don't have a right to tell me I can't eat food prepared with salt.

Posted by: Steve L. at March 11, 2010 09:43 AM (Gkhxf)
There are a lot of traditional recipes involving using a crust of salt around meat, fish, and even potatoes during the cooking process.
In addition, salt is used in baking bread to enhance the formation of gluten. I'm sure there's a way around its use that people who have salt-intolerance can employ, but the use of salt is not simply for taste. There's chemistry involved. In fact, a professor at MIT teaches a course on the chemistry of cooking.

It's a false choice!
Posted by: The Precedent at March 11, 2010 10:32 AM (l71WL)
Criticizing the banning of salt use for taste, texture, etc. is besides the point.
The point is one guy's father used salt excessively, and had some health issues. There may be other factors led to said health issues (for example, the other life style, excercise regime, and tons of other stuff). But due to just one guy's father, the whole of the state could be banned from using salt. Why, because that one guy is a law-maker.
The proposed bill will not likely pass, but that is besides the point, too.
