That may be a consideration, but it does not make the disciplines -in themselves- any less worthy.  And there are good liberal arts teachers out there.  They mostly don't grade on your specific content ("there are no wrong answers...") but, instead, grade based on your mastery of the techniques. 

There are well respected critics (in all liberal-arts disciplines) who have great respect for each other, but virtually never agree.  This is because they can see the craft of the critique itself, while disagreeing with the conclusions.  They really mean it when they say, "With respect to X, I think he's completely wrong when he says 'Y.'"

Being good at those disciplines requires every bit as much effort as being good at Calculus or Physics.  My main problem with them is that they're viewed as "easy," and so too many people get "liberal arts degrees" expecting them to magically confer some real-world skill.  The number of people who need that kind of training is probably about 1 - 3% of those we need with STEM degrees, and that number is probably about 10 - 15% of those who don't necessarily need a bachelor's degree at all.

You don't have to pay twice as much.  If he's paying minimum wage (7.25/hr?) he could jump that up to 9.00/hr and probably get some legal candidates.  Okay, that's an increase, but not an absurd one.  Now, factor that into the number of fish processed (or whatever) and the extra dollars per fish really isn't that high.

More importantly, you will almost certainly have lower turnover, better availability of your workforce (less time hiding from ICE), and a variety of other benefits.  Illegal workers are not, as a rule, the most reliable.  They're used because they're cheap, not because they're good.

Further, once someone has been gutting fish 10 hours a day, 4 days a week for 2 or 3 years, I bet their output-per-hour goes up, and their mistakes-per-hour goes down, meaning you're actually getting more fish-per-dollar than you were before.  Again, illegals (as a rule) aren't reliable enough to keep the same ones for 2 or 3+ years.

Subtract the hidden costs of those illegal immigrants (less drain on medicaid, for one) and even though the catfish may cost more, everyone has more money (because taxes are lower) so it's not any more expensive relative to what people are making.

Mandating higher wages is bad, because it artificially inflates labor costs.  Labor costs inflating to reflect actual market conditions, however, is not actually a bad thing.

This argument is something of a strawman.  IIRC, one of the think tanks, Heritage or one of the others, addressed this same argument as it is made about lettuce and other labor-intensive crops where people essentially say, "Look, we need illegals to pick these for $3/hr, otherwise the cost of lettuce will triple!"  Heritage's analysis indicated that the actual rise in the cost of a head of lettuce if wages on the American wage scale were being paid was on the order of 5 cents.  Hardly a budget breaker.  This is because there are a lot of other costs that go into the price of a commodity than just wages.  To try to draw a binary correlation between labour costs and final price is not a tenable argument.

And, honestly, if Mr. Rhodes has to triple the cost of his catfish to make up for having to pay workers $15/hour instead of $7.50 an hour (or whatever the going minimum wage is now), then he probably either needs to develop a new business model or find another line of business.

I'm not a huge expert on gutting and scaling catfish, though I've seen it done a lot because our family used to have these huge fish fries about three times a year, so every weekend, everyone was out cleaning the fish caught over the previous two days.  I'm thinking that the main problem with having a machine do it would be related to the "squishiness" of the fish - it'd be hard for a machine to consistently take the same cut of meat off the fish, after it's been gutted and scaled, I would think.  This may be why somebody hasn't already invented and marketed such a machine.

That is exactly right.  Ever see a hospital emergency room, used to be just in places like Arizona and California, but now all over, even here in North Carolina?  At our local university hospital, the average wait for an emergency room visit, even if it's something serious, is on the order of several hours unless you are absolutely having a heart attack on the spot or something and have to come in on an ambulance.  Why?  Because of the scads of "undocumented" families who treat the emergency room like a clinic, bringing their kids in if they have a sniffle, because they know that emergency rooms cannot ask about immigration status, and that the tab for their visit will be picked up by Medicaid, i.e. the US taxpayer.

I've heard of hospitals out in the SW sand states that have gone under because so much of that went on, and the compensation from Medicaid is never enough to cover actual costs.

  We used to fish the feeds to Lake Ontario for bullheads, the 8-10" variety taste best, imho. Cleaning them is simple, I still have the board with a spike driven through it. Just impale the head, slice the skin behind the spines, 2 pliers and a good pull does it.  breaded and deep fried works as well as anything else I've tried.
