This week's famous chess game, sent to me by a moron whose name I forget and I'm too lazy to look up, is Edward Lasker vs. George Alan Thomas, London, 1912

1. d4 e6 2. Nf3 f5 3. Nc3 Nf6 4. Bg5 Be7 5. Bxf6 Bxf6 6. e4 fxe4 7. Nxe4 b6 8. Ne5 O-O 9. Bd3 Bb7 10. Qh5 Qe7 11. Qxh7+ Kxh7 12. Nxf6+ Kh6 13. Neg4+ Kg5 14. h4+ Kf4 15. g3+ Kf3 16. Be2+ Kg2 17. Rh2+ Kg1 18. Kd2# 1-0
Non-chess players usually think that what makes chess grandmasters so superior to the rest of us is that they can see some ridiculous number of moves ahead (like 15-20), while we lesser mortals simply can't. But I don't think this is the case. When the position is real complicated, I don't think grandmasters can see that far ahead (of course what they see, compared to lesser players, is the more important question). But the difference is more apparent when the moves are forced and there are few, if any, variations to worry about. That's when the long distance vision kicks in. Like this game here. After Black's 10th move, it's pretty much a forced mate in 8, and I'd guess Lasker worked out the whole thing in advance. Which is truly impressive.

I don't know about "robbed", but your three also-rans are a good list. Fine's chances were ruined by World War 2 and then he retired to become a psychologist. Keres should have been champ, but the Soviets pressured him to lose at the right moments (and at one point almost had him killed) because he played in a few Nazi tournaments during the war. Pilsbury had a heck of a chance to be champ but just died young.
Also included, in my opinion, should beVictor Korchnoi, David Bronstein, Carl Schlechter. Korchnoi lost twice in bids against Karpov in the late-70s and early-80s. Bronstein drew his match against world champion Botvinnik in the 50s. Schlecter had his match against Emmanuel Lasker won by simply drawing the last game. But instead, he played for a win and lost. In the modern era, we might have to include Veselin Topalov, who has two unsuccessful bids to his credit and has been in the top 10 for around 15 years now.
And it's too soon to be using the word 'never' regarding young guns like Magnus Carlsen and Levon Aronian.

The more of these I see makes me want to get back into it too. I'm not all that great (probably about a 1600 USCF rating), but I had a lot of fun when I played a lot.

I think it is the case actually. I remember reading somewhere that Kasparaov thought about 17 moves ahead. Once they're out of their opening prep, the lines of attack are actually limited because they've researched and studied the main lines and most of the variations. Most of the GMs can play one another to draws for these reasons.
Have you ever watched these guys resign against one another late in the midgame? Happens a lot. Even when the game goes off script, there are a limited number of viable lines, so they're able to think out to 10-15 or more moves ahead. Well, the tactical players at least.
It's really all about math, which is why computers can be programmed to play it at the GM level.
