A Classic New Jersey Dish: Barbecued Shrimp and Cheese Grits [CharlieBrown'sDildo]
— Open Blogger

(With a Shrimp Rant™ at no additional charge)

For Ace's Southern readers who may be unfamiliar with grits; they are simply milled corn cooked in some liquid. In this case homemade chicken stock. And adding cheddar cheese, butter and a dash of cream has never hurt any food in the history of cooking, so trust me on this; it's a good thing. Finish it off with some good quality shrimp (American, from the Gulf or off NC or SC is the best around) in a nice barbecue sauce of your choosing, and you will have a quintessential American meal that is fantastic.

shrimp and grits.jpg

Grits are easy to make: four to one boiling liquid to grits (pour them in slowly, stirring constantly), and cook uncovered on low heat until they are tender and creamy, about 20 minutes, stirring the pot frequently. My timing is one sip of a Sazerac to one stir of the pot. I also toss in a bit of garlic, because garlic is always a good thing.

When they are done, stir in some grated sharp cheddar, a fair amount of butter, and some cream. Correct the seasoning -- salt and pepper, and some Cayenne if you are a fan of heat.

The shrimp are even easier. Use good, big shrimp, coat them with your favorite sauce (not too sweet and not too much!), and grill for two minutes/side.

Serve with some more sauce on the side, and Bourbon. Lots of Bourbon.

Crumbled bacon wouldn't hurt this, but some crispy Andouille sausage might be nice too.

This recipe calls for:

4 cups stock
1 cup old fashioned grits
4 ounces grated sharp cheddar
2 ounces butter
1 ounce cream
1 pound large shrimp

Adjust the amount of liquid based on how firm you want your grits. These are fairly firm.

But let's talk about shrimp -- specifically, those great Gulf shrimp whose fishery was destroyed by the evil oil companies. Remember? I made this dish last night, using fantastic Gulf shrimp that I bought at my local market. They weren't particularly expensive, but they were particularly good, and I couldn't even taste the oil.

The reason I try to buy American shrimp, aside from the excellent quality and a desire to support our fisheries, is that the cheap foreign shrimp that has flooded the market for years is cultivated, mostly in India, Indonesia, Thailand and China. The ponds are pumped full of a cocktail of chemicals to promote growth and minimize loss to bacterial disease. And those bacteria can be nasty. The most common is supposedly vibrio, which can be an unpleasant way to spend a few days driving the porcelain bus. Those ponds are also not the cleanest places on earth, and my guess is that there are all sorts of heavy metals and other crap in the silt on the bottom.

But foreign shrimp is cheap, and absent clear evidence that they are bad, it's simply an economic and gastronomic choice. Of course Obama and his minions will soon drive many of our fishermen and packing houses out of business, so we may not have that choice for very much longer.

This looks similar to shrimp and grits, a classic SC dish.  The best I had was at Poogan's Porch in Charleston, SC.

4 You yankees are always taking credit for things you didn't do. Grits in NJ? Yeah, right. I bet they serve sweet ice tea there as well, not. You admitted the shrimp were a southern import, but where EXACTLY were those grits made? BTW, don't let your tub o'lard Obama-lovin' governor get a whiff, or you'll go hungry!

11 "For Ace's Southern readers who may be unfamiliar with grits..." I woke up feeling shitty this morning, so I'm not able to tell if this is facetious or not. Anyhoo, grits is one of the best "vehicle" foods around. Plain grits are pretty bland and boring, but they make a great vehicle to mix just about anything in. The list of stuff people put in grits is about as long as an ace movie review.

Posted by: Burn the Witch at January 12, 2013 06:31 AM (ROv35)

12 In Charleston we used to get shrimp grits that were very firm, with the bacon/pepper gravy ensauced shrimp baked on top. Was cut and served with a spatula, like lasagna. Don't recall cheese, lots of cream and bacon fat. This was institutional food, so I doubt we even got that fancy foreign shrimp - I'm sure it was imitation. Still ate it like starving Vikings.

17 OK, I'm pretty damned confused. I grew up in NJ on the Shore near Manasquan, and not once did I ever see this on the menu. Nor where my parents moved to in south Jersey.

Furthermore

For Ace's Southern readers who may be unfamiliar with grits..

are you kidding me? Grits are a Southern thing, not a NJ thing. I really how that was a bit of sarcasm, OB.

35 This dish has one of my pet peeves with Yankee shrimp dishes, leaving some, or all, of the shell on the shrimp then mixing them with gooey stuff. I almost got into a fist fight with the cook in a Maine restaurant when I ordered their "Alfredo with Gulf Shrimp", mainly because it was on the menu and I wondered what the hell Mainers would know from shrimp. Not much apparently since it was noodles, cheezy sauce, and unpeeled shrimp stuck right into it. I mean, you have to stick your hands into the sauce to peel the shrimp before you could eat them.

Conversely, after we found it, we ate at the Mainely Delight in Southwest Harbor once or twice a day for nearly a week, and paid $2 a lobster. 69 I too am annoyed when a sauce and pasta dish includes shrimp with the damn shucks still on. This seems to happen more and more in post-trad Italian places. I do not like it.

When the spill first happened, Gulf shrimp got cheap and I stocked up. Then it got real scarce. One hunnerd percent of Kroger seafood is now farm-raised in Thailand, China, Vietnam or Cambodia. I'll take the oil, thank you.

There is also the wild-caught Atlantic whitefish, origin China. WSJ reported last week that the Chinese fleet, driven by Chinese appetite for seafood and accompanied by Chinese intelligence gunboats, are pursing and seining inside South American Law-of-The-Sea limits.

What would be the carbon footprint of a fish, taken off Patagonia, trawled back to China to be gutted and frozen, canalled to the East Coast, trucked to the midwest? Let me point out that the entire fleet of the East and North coasts lie mouldering at the quay, stilled by our own government's overfishing concerns.

However, my best buddy in the Seabees was a Baltimore guy. He showed me how to steam that stuff with Old Bay and Old Milwaukee. That's the way I cook it now, even crawfish. And as to good cooks? I was raised a Baptist and those church ladies mostly had black mammies when they were little. As far as that goes, I had a black mammie, too. That would be 49-56 timeframe. I loved my mammie. True. I found a local market that uses meat as a loss leader. I got tbones for $4.99/lb last week and boneless chicken breasts for $2.99/lb.

Walmart wanted damned near $10/lb. of tbone. At the Mexican market I can get chicken leg quarters for $0.69/lb. That is why I never understand the eating cat food thing. Chicken is cheaper than cat food unless you are talking dry food, and while it makes granny's coat smooth and glossy, it is hard on the dentures.

Posted by: no good deed at January 12, 2013 12:46 PM (mjR67) I found some online when I made it recently but they weren't specific on the kind of cheese. Wound up buying some little wedges from the deli section that worked pretty good. The trick is to cook the bacon about half done before wrapping, but not done enough for the bacon to break.

288 how about a new thread: I nominate this, seen on yahoo nerws:

"Top Democratic senators urged President Barack Obama on Friday to be ready to raise the debt ceiling without congressional approval in order to avert a damaging debt default. Senate Majority Leader Harry Reid and his leadership team said Obama should use "any lawful steps" under his authority to "ensure that America does not break its promises and trigger a global economic crisis." They urged Obama to act on his own if Republicans insist on a debt limit extension that is coupled with "unbalanced or unreasonable" spending cuts."

It's time for an imperial presidency anyway.

A person who is not a regulated firearms dealer may not sell, rent, transfer, or purchase any regulated firearm without going through a regulated firearms dealer. Alternatively, the prospective seller/transferor and prospective buyer/transferee may complete the transaction through a designated law enforcement agency.>>

478 Here's the thing: There IS no such thing as obscene profits. Why? Because if my neighbor is selling widgets at $5 that cost $1 to make, then I can sell widgets at $4. Unless...there are such barriers to entry that I can't make the widgets for less than $5 but my neighbor can. Most of the time, it's government interference. Very rarely is it an industry with such huge startup costs that they can maintain a temporary high-profit margin. Even if they do, they'll get competitors unless they are a company with huge boom and bust cycles.

486 Positive review of fat Weasel Ale from Beer Advocate, pretty much matches how I'd describe it. I forgot to mention it only cost 6 or 7 bucks, which is a deal.

"Pours a medium golden yellow with a small white head that melts to fine lacing and then nothing.
Aromas of sweet malt and bready yeast...warm dinner rolls.
Taste is sweet malt and a balanced sharp hop bite afterwards...not really bitter...just sharp, clean and drying.
Aftertaste is of the crisp hops.
This is a beer you can drink lots of in an afternoon and find yourself in big trouble. The 7.1% alcohol is totally hidden.
So be warned...this is an American Strong Ale that is very well disguised as a mild APA"

It is smart enough to type so it must be able to do some rudimentary reasoning....

at some point they will admit they are never planning to lose again because 'we got this" ie fraud, or that they overtly understand that there is no law in this nation and that the GOP must follow the rules but they are exempt.

I want GOP corruption no more than obamashit, thus I am enraged at their looking the other while while we nail our bad actors thus far.

If corruption banana land this is to be then I'd prefer a dicorce and barring that will use every counter means to destroy the democrats that I can so that eventually we can clean the GOP.

533...This gun grab is gonna nail the donks in the balls.

I think so too, Sven.

It crosses over all the lines of political persuasion.

Right now...with so many people that are 'preppers' and generally thinking about how to protect themselves from the scary things that are going on...well, it's a bad time to even talk about taking people's gun rights away.

We have state regulation proposals, ATF weapons definitions, executive orders, ammunition registration, mandatory background checks for all gun & ammo sales/transfers, and lots and lots of lawfare already prepared and ready to go. After all, a majority of reasonable/rational gun owners agree that more gun regulation is needed, so why would anyone pay attention to the rantings of crazed gun enthusiasts who want a bloodbath in our city streets, playgrounds, and schools?

540 528 - when I got fed up with my expen$ive crappy range oven, I picked up a second hand Cadco commercial convection oven. No bells, no whistles, and only two knobs - for time and temperature. I've done 15lb turkeys and a 13 1/2 lb boneless standing roast in thing and it works wonderfully.

542 In the local Port Charlotte FL paper, the firearms section of the classifieds - AK-74 folding stock, 5 30rd mags and 900 rds. First $2950 cash takes it. There's your obscene profiteering, Mike Hunt.

543 After hearing the elevation I figured it had to be. I never had given it any thought. In my mind it was just like no good deed said, the place with the cool fruit stand on the way to the beach.

545 IDK if anyone's mentioned it, but if you're on a low-carb diet (like I am) and love grits (like I do), almond flour works great as a substitute... equal parts almond flour and water...bring to a simmer, stir, remove from heat and throw in some white cheddar or other mild cheese. Wait a minute, then stir...serve and enjoy. I do shrimp and grits several different ways with this...good stuff.

Shrimp and Grits, a New Jersey dish? I don't think shrimp is native to NJ, and grits are hardly Yankee fare. The world's annual Shrimp and Grits festival is held every year on Jekyll Island off Georgia. Yes, Jekyll Island, the same place the New York bankers came to seal our fates with doom back in 1910. Guess they stole the recipie and slunk back north with it, claiming as their own. No doubt what happened!

547 I'm sorry but Ace and his minions picked the WRONG day for a food pron thread. There's no way anything can beat the Chicago-style Vienna Beef hot dogs (one spicy, one chili) I had for a late lunch today.

548 Grits will make you fat. Just eat more shrimp.
