— andy Make sure to use your dingle-dangle when you fry a turkey.
My fried turkey recipe (courtesy of Lonesome Dove Bistro in Dallas):
- Brine the bird(s) in kosher salt for 8-12 hours (3/4 cup of salt per gallon of water needed to completely cover the bird)
- Injection: 3 cups chicken broth, 8 tablespoons tabasco sauce
- Rub: 2 cups brown sugar, 1 cup kosher salt, 1/4 cup chili powder
- Cook the injected/rubbed bird in 375 degree peanut oil for 3 minutes per pound. When it starts floating, it's done. Internal temp should be about 180 if you're a stickler like that.
I've been using that recipe for 10 years, and it's always a hit. It has a little spice to it, and a little sweetness. Pure deliciousness.
And here's a bit of a pro tip. Use a 10-12 pound turkey for frying, max. You don't need to use as much oil with a bird this size, so the spillover when you lower it into the fryer is much more manageable. And they cook so fast that you can just add birds for volume. I always cook 2 ... one to eat and one for leftovers.

Just stopping in to wish everybody a Happy Thanksgiving.
And to give the question to ponder.....Why don't they actually show the parade on the broadcast of the Thanksgiving Day Parade?
Feast well my Friends!

Easy time for me this year, only need to make 2 pumpkin pies. I like baking anyway, so it's all good.
It has been a tradition for me to do pies, they seem to garner tons of compliments. Originally started with one, now 2 and maybe 3 for next year.
I use lard for the crust, and add 1 tsp of sugar to it. The other addition is a scant capful of vanilla extract in the water used to moisten the dough. Of course, the dough should be chilled to the point of freezing before being rolled out.

First 1/3 of turkey parts is on the grill being mesquite smoked over a pan of celery and onions. Last 1/3 will be a bacon-wrapped turkey breast.
Prepare to salivate. Engage!

How many of those like your niece who are clutching their pearls over stores "forcing their workers to be away from their families" are looking up showtimes at the cineplexes so they can meet with friends to catch a movie
I guess AMC-20 employees don't have families

Mike, I'm not a fan of it either, but I'm even less a fan of sanctimonious leftists, like my niece who hate on people for shopping.

Tips:
Small bird
NO BOOZE
Watch cross-contamination; your bird is more likely to kill you with salmonella than napalm.

Yes, this. When I was a young nurse working in hospitals, I worked Thanksgiving and Christmas so others could be with their families on the day. Also for the sweet, sweet double-time.

Remember the episode of Star Trek when Kirk was split into two Kirks. One Kirk was a bad boy, the other was feminine and non-confrontational.
William Shatner in real life is a bigger wimp than Wimpy Kirk in that episode.

Hmmm, sounds like an episode of BTVS, when Xander was split in two: wimpy, whiny Xander, and badass Xander.
I bet Star Trek ripped it off from them.
And I bed Nick Brendan is more like wimpy Xander too.

Shed a tear also, for all those college basketball players, coaches, etc. who have to go to out of town tournaments this week. Especially those who are stuck in places like Hawaii, Cancun, Puerto Rico, etc.
So sad...

Frosty mug and Stoli from freezer
put in 1 1/2 cups leftover tomato soup,

a dash of worchesterwhatever, few drops of lime juice,
double shot of Stoli.

Of course, you have to make sure the EM pulse phase inducers are properly aligned, but everybody knows that.
You also might want to reverse the polarity.

I brine my birds with 1/2 cup of salt to a gallon of water, in a cooler with half the water frozen into cubes. Add peppercorns, orange peel, rosemary, garlic, celery, onions and carrots and bay leaves.
I have deep-fried before, and it's fun. I prefer to fry in lard, which you can heat to 400 without it smoking. That way when you plunge the cool bird in the oil, the temp will drop to 380 or so, and you'll avoid soaking up a bunch of oil in the skin.
Happy Thanksgiving, y'all.
