A Thanksgiving Tradition: The Shat Puts Us Some Turkey Frying Knowledge

Make sure to use your dingle-dangle when you fry a turkey.

My fried turkey recipe (courtesy of Lonesome Dove Bistro in Dallas):
- Brine the bird(s) in kosher salt for 8-12 hours (3/4 cup of salt per gallon of water needed to completely cover the bird)
- Injection: 3 cups chicken broth, 8 tablespoons tabasco sauce
- Rub: 2 cups brown sugar, 1 cup kosher salt, 1/4 cup chili powder
- Cook the injected/rubbed bird in 375 degree peanut oil for 3 minutes per pound. When it starts floating, it's done. Internal temp should be about 180 if you're a stickler like that.

I've been using that recipe for 10 years, and it's always a hit. It has a little spice to it, and a little sweetness. Pure deliciousness.

And here's a bit of a pro tip. Use a 10-12 pound turkey for frying, max. You don't need to use as much oil with a bird this size, so the spillover when you lower it into the fryer is much more manageable. And they cook so fast that you can just add birds for volume. I always cook 2 ... one to eat and one for leftovers.

8 The technique for measuring the oil for no spillover, I've heard, is to fill the pot with water well in advance, add the turkey, and let the water spill over to see where the fluid will rise to. When you take out the turkey, you can note the water level as your fill line for oil.

9 Dressing is mixed by hand by Mrs. E. First the turkey gets stuffed, then the dressing goes into caserolee bowls, 2/3 regular, 1/3 oysters added. Then the obligatory green bean stuff, and mashed taters, finally gravy and rolls. Looks like 1400 ETEX time to eat. I have only had 1 shot of bourbon thus far. The longer I'm awake this AM, the more thankful I get. I am blessed to be here. I wish the same blessings on all of y'all and yours.

20 The turkey is in the bag and the bag is in the roasting pan and the pan is in the oven at 350F.  The cornbread and wheat bread are in the baking pan, the celery and onion are chopped and the eggs are boiled for the dressing.  I need to fix mashed potatoes, make gravy (although I hope my brother will do that), make a salad and that is it.  It's just my dad, brother and me this year, so I'm going bare bones.  Oh, and white cake with some frozen peaches our neighbor gave us for just a taste of summer.

And then it's on to another Cowboy win against the Raiders on Thanksgiving Day.

   Easy time for me this year,only need to make 2 pumpkin pies.  I like baking anyway, so it's all good.

   It has been a tradition for me to do pies,they seem to garner tons of compliments.  Originally started with one, now 2 and maybe 3 for next year.

    I use lard for the crust, and add 1 tsp of sugar to it. The other addition is a scant capful of vanilla extract in the water used to moisten the dough.  Of course, the dough should be chilled to the point of freezing before being rolled out.

40 I was on a bear hunt in Eastern NC when I had my first fried turkey. I thought those stoned rednecks were crazy, but damn that thing was good. Moist and firm and after a few chom boy specials, there was no turkey left. Be fucking careful, my son cooked a wild bird in our driveway and we followed all the instructions, still got some boil over. You can always add oil so start low.

Before we got started, I looked at the little tech gal and said, "I have something very important to ask you: do you still make those heavenly pecan pies?" She said yes, and led me to them after we got done. So, yeah, I'm the PieBoy for today's festivities at the kids' house. Cooking ? That's for DIL#2, as she's the best at it.

Yes, this.  When I was a young nurse working in hospitals, I worked Thanksgiving and Christmas so others could be with their families on the day.  Also for the sweet, sweet double-time.

64 Kids dispersed to various in-laws. Joining the rest of the old folks at my sister's house. Wife responsible for that iconic 1950's dish, green bean casserole with cream of mushroom soup, all topped by onion rings (from frozen of course). BIL loves him some of that. Me, I'm doing pumpkin pie from fat Jim Beard's 1960's recipe - before he got religion about slimming down and living longer. Lessee, 6-8 eggs, a pint of heavy cream, some sugar, half cup of cognac, some spices, and, oh yeah, a little pumpkin in there. More like a custard in a pie crust. Kudos to irongrampa for homemade crusts with lard, but I'm lazy and using store bought crusts instead. Happy Thanksgiving everyone. Let us enjoy a respite from He Who Shall Not Be Named Today, in least near me.

Recipe-
Frosty mug and Stoli from freezer
put in 1 1/2 cups leftover tomato soup,
pour in juice from 1 dozen oysters,
a dash of worchesterwhatever, few drops of lime juice,
double shot of Stoli.

92 I smoked two turkeys yesterday and cut them up last night.  Put them in roasting pans, refrigerated, and then made stock from the carcasses over night.  Today,  put the cut meat in roasting pans, put a quarter inch of stock in the bottom of the pans, tent with foil, and re-heat.  Easy moist and delicious.

I brine my birds with 1/2 cup of salt to a gallon of water, in a cooler with half the water frozen into cubes.  Add peppercorns, orange peel, rosemary, garlic, celery, onions and carrots and bay leaves.

I have deep-fried before, and it's fun.  I prefer to fry in lard, which you can heat to 400 without it smoking.  That way when you plunge the cool bird in the oil, the temp will drop to 380 or so, and you'll avoid soaking up a bunch of oil in the skin.

94 I think I over did it. Turkey and ham, stuffing (2 kinds), sweet potato souffle, mashed potatoes, creamed spinach, the green jello stuff, taffy apple salad, cranberry sauce, green bean casserole, another veggie casserole, choc. pecan pie, blackberry cobbler, pumpkin pie cake and caramel apple cheesecake bars. (Some of that is coming from others.) I should get some dinner mints, huh?

99 Great day so far. Up at 5:00, in the waders and in the slough by 6:30. Me and hunting buddy had two limits of teal, wood ducks and gadwalls by 7:15. Late afternoon Thanksgiving Day meal here. Son & DIL only. The Sgt., daughter and two grands are living in CO.

100 Relish tray for noshing throughout the afternoon. Drinks are your choice of apple cider, ginger ale, and Wild Turkey bourbon. The main event is two turkey breasts (the 2nd one is for sandwiches tomorrow), gravy, Grandma's stuffing, cranberry-pear-orange sauce, mashed potatoes, candied sweet potatoes, and Brussels sprouts sauteed with shallots and bacon. For dessert, pumpkin pie. Nobody in this house will be setting foot near a shopping mall or trying to sign anybody up for Obamacare. God Bless America and Happy Thanksgiving to all!

101 Mama AJ, I may have exaggerated when I said the brisket was cookin'. It was store bought already smoked from Sam's Club. It was also quite tasty. Not the best I've ever had, but good enough.
