— Ace I think I post these just because it's kind of odd how vehement the reactions are sometimes -- the "Calories In Equal Calories Out" guys are pretty adamant that the human body is perfectly similar to a test tube and the effect of any food on the body can be determined simply by burning the food and measuring the heat output via a calorimeter.
Other people suspect that different food chemicals may have different effects on the complex system of glands that regulates the human metabolism, but we always but we'll be told we're wrong by the Calories In Calories Out guys.
Oh by the way:
1-Minute Muffin
1/4 cup Flax Meal (best with bleached almond flour, I think)
1/2 teaspoon Baking Powder
1 packet Splenda (Personally I like more)
few drops of vanilla extract
optional: dash of cinnamon
1 Egg
1 tablespoon Butter
I tablespoon of either sour cream or cream cheese (for heft and texture)
Other stuff for flavor, like low-carb chocolate chips or blueberries.
1.5 Carbs
Mix the dry ingredients in a large coffee cup. Add egg and pre-melted butter; mix well. Microwave for one minute, then another; you have to eye it to see when it's done. "Done" means it's risen and fallen and most liquid seems to have steamed off.
Let it cool and set for two minutes. Put butter on it.
It's not great, but if you miss bready things like muffins, it is reasonably close enough to a muffin to enjoy.
I haven't tried this in an oven. I imagine it would be better.
Damn: I know what I'm eatin' in like six minutes.

My carb binges are downright scary. They make me understand what it would like to be an alcoholic.
It would suck tremendously--the combination of having zero willpower to resist the damn stuff, and the fact that alcohol further suppresses inhibitions and mental processes. Talk about a vicious circle.
On a related note: the Calories In=Calories Out guys are totally, utterly, completely full of shit, and should go pick up a good biochemistry book or three sometime, to find out why.

Anyway, protein and fiber (and I think also fat, but um yeah) help you feel full, but carbs don't.
For anyone seriously wanting to lose weight, I would suggest looking into Weight Watchers. It's not for everyone (really, nothing is), but it does work pretty well. If nothing else, it makes you think about what you're eating and if it's worth it or not. I mean, before I started, I kinda knew that too many carbs were bad, but was totally unaware of how much was too much.
One thing about WW, though, is that it's a business, so they make money off people who buy the books and devices but don't actually use them, as well as people who go to meetings but don't actually change their behaviors and thus don't lose any weight (or lose, and then gain it back because they revert to old habits). Also, there is math involved, so it's cool for a dork like me, but like I say, not for everyone.

On the other hand, if I eat much more than maybe 60-80 g of carbs in a day, I'm going to gain weight. That's not a lot of carbs.
In other words, the USDA wants to kill me.
There is no one-size-fits-all diet. People's genetics have a huge impact on their "most healthy" diet, IMHO.
Another reason why our benevolent and loving federal government can not be trusted with the power that all too many people seem hell-bent on bestowing upon it.

jeeze. Table Salt is table salt but when she says "sea salt" she means ALL the various ions that are left when you dry away sea water, which may include lots of trace minerals.
She's suggesting the body is craving salt because it associates it with a trace mineral the body wants but because the person is eating pure table salt he's not getting it.
Jeeze. It's such a weird subject, nutrition. It's like one of those things everyone knows about (because we all eat, so we're all "experts").

Yeah, enjoy the cardboard with hint of chocolate taste.
Also, carbs are not the issue. Everything is about calories and specifically getting enough calories so as to not put your body into 'starvation' mode. Check out "Burn the fat, Feed the muscle" by Tom Venuto. It will demonstrate provably how you need to be eating more calories than you think you do, and that you will lose weight doing so.
Yeah, I was skeptical too when my wife said she was going to try it six months ago.
She's lost 40 pounds...and eats all day.
I have to maintain 2700 calorie intake per day (which I initially thought was insane, and it's much harder to do than you might think). Lost five pounds in two weeks...and I'm practically eating all day (and I'm not limited in what foods I eat).
No, I have no financial interest in the program, and no, it's not a diet, it's a lifestyle change...in case you're interested.

I KNOW I'm addicted to carbs.
Proof?
When I have 2 eggs and a Morningstar veggie sausage for breakfast, it lasts me all morning.
If I crack open a box of cereal, I will eat half of it at one sitting, and pour a ton of sugar on it. And still feel like I could eat more.

not really because you can have all of that on Atkins As long as it's made with heavy cream and a non-sugar sweetener.
The Breyer's low carb Chocolate is not half bad. But the Vanilla exposes all of the scaffolding, and should be avoided like a witness who can't read her own letter.

They're cheap and filling, and loaded with energy. Also, they keep well without refrigeration.
Those aren't really a concern anymore for most Americans, though.

Heh. We had an ice cream with toppings event at our office one day and sent out a departmental mass e-mail that touted "Ice cream and toppings in the 6th floor break room at two o'clock." There was a near riot on the sixth floor at the main office when they finally figured out we were in a branch office some 250 miles away.

I know I'm extremely carb sensitive and, as others have noted in the thread, I'm a lot more prone to overeat on carb-heavy savory things (pizza is my nemesis, so I never, ever order it) than on sweet things.
I did hard core no carb for most of a year, and while I did lose about 20 pounds I also ran into problems with my cholesterol shooting through the roof. So then I panicked and decided I needed to get my cholesterol back down as my number one priority and went vegan for six months. Cholesterol went down, gained 30 pounds.
While I was doing the no carb thing, I was losing weight and actually felt like I needed less sleep, but I also felt like I was sorely lacking in energy, so exercise just wasn't happening. On the vegan diet, I had plenty of exercise and actually felt very rested and maybe even calmer and more collected, but I packed on weight like nobody's business.
So now I'm trying a low carb (not no carb) and low cholesterol diet with 'good' fats. Also trying to pick up the exercise even more, since no matter how healthy an eater I am (and it's always been healthy, it's how I was raised), I've just really got to watch the waistline.

Wait. Splenda has a higher glycemic index than sugar? Next you'll tell me it has to be metabolized by the liver, like half of the sugar molecule. Science. What can it not do?

I have hypoglycemia, which is a diabetes precursor, and is very prevalent in my family. My mother was diagnosed with diabetes at age 50 and died 8 years later; both my grandparents and uncle had it.
Lost 45 lbs on Atkins in my early 30s and managed to keep it off for 15 years.
Then came menopause; for comfort I went after the carbs, and gained back 40 of it within 6 months.
With age 50 creeping up, I had to get serious. So I went back to a low carb diet and PRESTO: the weight fell off in six months. And it's stayed off for 5 years.
Once in a great while, I will have a sugar-laden treat, or a white potato, or rice. Otherwise I must stick to the low-carb lifestyle - strictly.

If anyone is interested, there's a documentary on Netflix streaming called Fathead. It's a rebuttal to Morgan Spurlock's Supersize Me and was created/hosted by a nutritionist and former standup comic. Very entertaining and goes into how food companies are keeping you hooked on carbs.

So big whoop: Some people can eat twinkies and not trigger a craving where they go over the # of calories they are burning per day as long as they also get some vegetable fiber and meet their minimum nutrition requirements and they are rigorously keeping track because they are writing a research paper.
Most people who grab a twinkie are not recording calories and they are not switching to a can of green beans and an ensure to keep calorie intake in line after eating 2/3rd of their needed daily calorie intake in snack cakes.

one study that showed that saccharin released same insulin response in liver as same as with fructose. search for liver.
Whew! Hard read for sure. Looking for liver references turned up only the information that saccharin is not metabolized by the liver, but I grant that this makes the point about insulin response to saccharin being not what you would want from an artificial sweetener, if you believe in the "insulin release == fatness" connection for some people, as I tentatively do. So what have you got for Splenda?

yup, all he does is rag on him. The Fathead guy eats fast food twice a day every day (maybe all three meals). But he's carb conscious about it. He loses weight. I don't think he even eats salads.
What would surprise people here is -- and I think this is interesting for political theorists, like you all -- is that in fact it was standard common sense accepted wisdom that carbs caused weight gain until around 1965. That's why moms would say "Don't eat too much pasta, you'll get fat" and etc.
In 1965, based on almost no evidence (a few studies that have now been debunked), the entire Conventional Wisdom shifted, herd-mind-like, in just like 5 years, from "Carbs get you fat" to "Fat makes you fat; you can have all the carbs you like!"
You can see the effects of this shift in thinking by comparing the average person's weight in 1965 to the average weight today.
There was a traditional received wisdom that carbs were fattening (in fairness, there was not much medical proof of *this* Conventional Wisdom, either), and then it was entirely abandoned in favor of the New and Novel thinking based on some bad studies. And then for 40 years barely anyone even questioned this new Conventional Wisdom. In fact, skeptics were derided as dangerous charlatans and cranks.
People are not very good at thinking. They are especially bad at thinking when "thinking in groups," which frankly is an oxymoron. "Group Think?" It doesn't exist.

This is how the national government became, as an official matter, anti-fat and, more importantly, pro-carb. And very pro-carb indeed -- carbs DOMINATE the food pyramid. Breads are at the base!

I was diagnosed with type 2 diabetes in April, so I had to go low carb in order to maintain my blood sugars. I eliminate the foods that raise my blood sugar, and am trying to get most of my carbs from veggies (I try to stay below 60 grams of carbs per day), and my fat intake between 50 to 60% of my calories. When I don't eat as much fat, I don't lose that much.
I'm not on Atkins or South Beach or Paleo or anything like that. I've just eliminated the foods that rise my blood sugar beyond acceptable levels, therefore it's the "Foods That Won't Kill Me" diet.
But what gets me is that when I went in for my diabetes education, they still want us following the food pyramid guidelines while avoiding the processed stuff, even though those guidelines are probably what put me here to begin with. After I ate a sandwich with double fiber whole wheat bread, my BG rose almost 70 points after an hour, so I stopped eating it and now more recently gave up eating wheat altogether. You're dealing with people that have a carb intolerance -- why suggest they eat carbs that are still not good for them????
