Awesome. With the simultaneous price escalation and quality degradation of bacon, I've been laying off of it altogether. Maybe I'll give these instructions a whirl some time.
You have to special order fresh pork belly in my area...and I assume it's pretty much the same for everyone else, which makes it more expensive. We know the head chef at a local Hotel who regularly prepares a pork belly dish at the Hotel, and he has to get the pork bellies from NYC. I don't know of any store in the area that will accept a special order like that.

It's not exactly in grocery stores here, but most of the Butchers around town carry pork belly.
They tend to sell it to you in a just a couple of pounds at a time (presumably because lots of people try this and a few give up.)
Me, I did this once or twice, using the cold smoke method (where you generate the smoke in a second smoker and pipe it into the one with the bacon.
I used a wet apple juice based rub shamelessly stolen from Alton Brown, it turned out pretty good. Then I got my LDL levels and had to stop

4 Anyone know what differences there are in the various European styles and US style bacon? I have Brit friends that think US style bacon is inferior, although if they're trying the store bought packaged paper thin and fatty stuff I can see where they're coming from.
There is a difference between wet-cured and dry-cured that might have something to do with it.

I don't buy store bacon anymore, as we found a tiny shop a few miles from the house that sells their own bacon, at more than a dollar per pound cheaper than even the off-brand stuff at the supermarket.

No, it's curing salt. Sodium nitrate, maybe? They dye it pink so you don't accidentally use it as a seasoning. The stuff is meant to be used for curing only, in moderation.
