How Old Is Too Old For Liquor?

Are some supervintage spirits just too old?

"Yes," Dave Pickerell emphatically says. As a former master distiller for Maker's Mark in Kentucky for 14 years and the current master distiller for Hillrock Estate Distillery in New York's Hudson Valley, Pickerell has aged his fair share of whiskeys. "It is possible for a spirit to get too old. Sometimes older is better-but sometimes it's just older.

...What distinguishes these two approaches is what Pickerell refers to as "the tea-bag effect": The first time a tea bag (or barrel) is used, there's more flavor to draw out. Resting in brand-new barrels, bourbon needs less time to extract what Pickerell calls "wood goodies"-it sucks vanilla and caramel flavors, as well as spice-like notes, out of the wood with ease. Many of those same bourbon barrels, once emptied, make their way to Scotland, where they are used to age Scotch whisky. At this point, most of the "wood goodies" have been depleted, so scotch often needs a longer aging time to suck out the remainders. Evaporation plays a role, too: In the dry climate favored by bourbon distillers, liquid evaporates more quickly, and the product becomes concentrated more quickly.

Pickerell puts the ideal aging range for rye (whiskey made with rye as its primary component, as opposed to corn or other grains) between nine and 11 years, while the "sweet spot" for bourbon (made with corn as its primary ingredient) is anywhere from six to 10 years. And scotch? "While it depends on the type and style," he says, "20 years is a good number."

While it sounded rather far fetched at the time, this week, science fiction became a bit closer to science reality with the news that Fujitsu Laboratories (Kawasaki, Japan) has developed software that is capable of measuring an individual's pulse rate in real time by calculating variations in the brightness of their face.

Sakamoto Ryoma: The Man Who Made Japan a Modern Country

It's rare that a single man can transform an entire country into a full, modern state but Sakamoto was one of those men. And he did it all before being assassinated at the age of 31.

In 1853 when Commodore Matthew Perry rolled into Japan, Sakamoto actually saw his black ships coming into the harbor. This roused feelings of both curiosity and angst in Sakamoto.

He later became the student of Katsu Kaishu who had studied Western militaries and traveled to the US.

Sakamoto was convinced. Among many other things, Katsu instructed Sakamoto in the ways of naval science, joint stock corporations, American democracy, and the Bill of Rights.

...Together with Katsu, Sakamoto worked towards creating a modern navy to contend with the naval forces of the Tokugawa. Sakamoto was so influential here that he's even been called the "father of the Imperial Japanese Navy". Sakamoto also established Japan's first modern company, Kaientai. Kaientai was a private naval and shipping firm that Sakamoto and his men used to transport guns for the revolutionaries.

While Sakamoto's revolutionaries prepared to crush the shogunate with military might, Sakamoto drew up an eight-point plan. It was a simple but incredibly forward-thinking piece of work which laid out what he considered to be the necessary conditions for a stable and respectable government after the fall of the shogunate.

47 Re aging spirits: After he retired my Dad started making wine, first using grape juice concentrate, then he got creative and made blueberry and blackberry wine. A friend mentioned homemade tomato wine; Dad took up the challenge and made a batch. As I recall, it was about 20% alcohol content, acidic and initially bitter. After it aged a year or so it got a lot smoother but still had a good kick. But after three years it became absolutely  undrinkable.

54 Their climate model sucks. For one thing, it doesn't lay the blame squarely at the feet of Richard Nixon. A lot of you weren't around then, and the Weather Channel isn't covering it b/c the Weather Channel. Here in Minnesota, we have these boulders, in some cases giant boulders, called "glacial erratics". There here and there and wherever the receding continental ice sheet left them. As a result of Nixon's waiting until his second term to establish the beneficent and merciful EPA, there was rapid "climate change". Now we have these glacial erratics everywhere, including in the middle of some of our older freeways. Some of the drivers here (not Minnesota-born) are none too good to begin with, and those boulders really seem to phase them Congressman Ellison's mom was frightened by one of these boulders when she was great with child, carrying the incipient Congressman.

I remember when the Big Mac was introduced. Now there's a culinary landmark.

 

 Sometime in the mid 70's a local McDonald's sold McDonald's hamburgers and cheeseburgers for their original '50's prices. My mom brought a freezerful of them. When I was 15, I could have eaten McD's everyday - until I was eating McD's everyday. After a couple of weeks I couldn't stand the sight of them. Didn't go to McDonalds for another 10 years.

Boulder, I have no idea where I read it.  It was in a link from Insty to somewhere, talking about a time in the remote past when humanity almost went extinct.

Apparently, before this time, we had 48 chromosomes and afterward we had 46.  So there must have been a tiny group whose progenitors had a strange mutation.

Does ANYBODY besides me remember around the late 1970s/early 1980s, when Frito-Lay sold Tostitos Picante Sauce in a bean dip-sized can??

I swear they did... and believe it or not, I loved it. It was horrible to look at -- colored a dirty brown, which I believe was most likely why it was in a can rather than glass. But it was taste, and actually spicy to boot (at least for that era).

Then, I also remember Tuna Twist, Spoon Candy, and Slender drinks.

77 i have had a broken computer and flat out been too exhaused to do more than lurk the blog on my phone for weeks. but my aTiny house is almost live in able, and the varnishing on the walls is all done, so i am stoked. However putting my horses back to work after i was laid up with a bad knee has been a nightmare. think of three 900lb teenagers with a bad case of "Youre not the boss of me!"

i noticed something weird taking the freeway from Irvine into the 909 from the 405 to the toll road to the 91. used to be at 3 the traffic going to the inland empire was at full stop for a couple miles going from the toll road to the 91. Clear sailing even after 3:30. Very strange. not just no gridlock. NOBODY on the tollway. i think Irvine must be a ghost town and lots of people let go in all those office buildings. Because NOBODY seems to be on their way home from work out there any more

82 In HS I worked at a McDonalds. Dollar an hour. We MADE the fries. I mean we peeled the potatoes, cleaned and soaked them and fried them in LARD. They were great. I remember when they started the fish sandwich. We all thought it was a dumb fucking idea, but cheese on a fried breaded piece of cod with thousand island dressing on top was damn good. Had more fat and calories that the burger.

I remember watching space launches as a kid, and Armstrong stepping onto the moon. In my opinion, the space program did more than anything short of WWII to advance technology and science.  AND they did it with slide rules and pencils. The chain was (IIRC) pretty much centered in Colorado, and is defunct now, but with 50 cents lunch money, I could have four hamburgers and a coke. I remember when they started the fish sandwich. We all thought it was a dumb fucking idea, but cheese on a fried breaded piece of cod with thousand island dressing on top was damn good.

Their food sucks since they've stopped using lard to fry things....the filet o' fish used to be the bomb.

Heck....when I was sixteen, I worked at KFC...and we made the gravy, which included the delicious crunchy bits from the pressure fryer, (original recipe...extra crispy is just deep fried). They went the same route, everything's cooked in tasteless vegetable oil, the gravy is just powdered gravy mix, their honey is mostly corn syrup, the butter packets are congealed, and dyed vegetable oil.

109 @88 Could be. I will say one thing. The McDonalds I worked in was the cleanest restaurant I have ever been in. They stripped EVERYTHING down EVERY night and cleaned it all. Back then they also used Heinz catchup and French's mustard. They had a falling out with Heinz later and started making their own catchup. It was quite an experience. The head cook could not read and the only time he knew was 5:00 when he got off.

Yeah, I had seen something you posted in that regard.  My experience is undoubtedly skewed, 'cause I tend to see the ones who aren't aborted.  But my impression is that most parents react like BCochran indicated above- by carrying the pregnancy to term and accepting the baby.  

  Perhaps the number is that 90% of those that have amniocentesis confirmation of a chromosome diagnosis early in the pregnancy  choose to abort.   A lot of families either don't get the chromosomes, or it isn't suspected until after delivery.

146 Re: prenatal testing, I'd just like to point out that abortion isn't the only reason to get testing for DS or any other diagnosis. My older daughter was born with a birth defect (not Down Syndrome) that I had literally never heard of before then. A heads up, time to get used to the diagnosis and do some research would've made a huge difference. I'd never have an abortion,like most of you, but I always get a little weird when I hear about people who are high risk turning down tests for that reason.

Although the gas mechanism absorbs some recoil, it is still stiff. I shot a service rifle match (200-300-600 yards, 3 positions, slow and rapid fire) once a few places down the firing line from a guy shooting his Swiss 7.5x55. (I was shooting the NATO 5.56.) Not only was his accuracy competitive, but the muzzle blast was palpable at times a few places over. You can get bayonets for these, too. With the one I have, for example, you could run a fat lady through with it and have nearly enough left over to spit a rabbit.

In 20 years doing what I do, I can only remember 3 or 4 families opting to abort a Down syndrome baby at 18+ weeks gestation that we confirmed a cardiac defect on by ultrasound.  But like I say, it may be that the OB's and perinatologists push the abortion option much more in the earlier stages before we start even looking at the heart.

I hear ya sport. I can count on one hand how many hours of TV I watch each week. Even less when there's no hockey. But...baseball season is starting and the Rangers are putting the spank on the A's so I may exceed that this week. :-)

When I am bored, I try to take up Rachel's time by talking with them. My record is 20 minutes. I ask to be transfereed, etc. They always want your credit card number and you have to keep telling them your son said to call them back or get something in the mail. Of course, they will never give you a number to call back too. It is amazing how old and stupid I can sound and how patent they are when they think I am going along. I pretty much got "let go" because I would do the math for change in my head instead of entering it into the old mechanical cash register. I could not figure out why the people had such a hard time with math. My register was always correct and that even pissed them off more. I think they thought somehow I was cheating. I guess I was, I wasn't fucking stupid. Did I mention when I worked there they did NOT hire Blacks, really. They also did not like severing them. Can you imagine that?

275 @226 I've been to one reunion so far. My parents were H.S. sweethearts, and they've enjoyed theirs. Someone called me from my class, someone I liked, and so I went. The worst part was when they asked me to cut a birthday cake-- into 17 pieces. One of my old party buddies (who'd already had a stroke from the partying) asked me if I'd seen S. lately (my true love from H.S.), "Man, she looks like she's been in a pyramid!". The reference was lost on me until another classmate reminded me of "pyramid power". Yep, she was still under 50kg, had none of the dessicated quality middle-aged horsewomen (she's an eventer) sometimes get, but was not still doing bare-knuckle pushups-- boy pushups). Married, for the 5th time (!), this time to a guy a lot like me, at least outwardly. Worth attending one, anyway, at least for the imponderables.

My gut feeling: it's partly developmental. Probably something to do with fetal testosterone exposure. There are physical markers like finger length ratios and the subtle things that set off one's "gaydar."

And there's a huge social/environmental component nobody wants to talk about. (E.g. long sea voyages, prisons, boarding schools, etc.) If kids grow up in a society where it's encouraged, you'll see more of it.

 


I think I've given my theory here that about half the gay male population is born that way.  The other half are the product of social/environmental factors.  I think a lot of it has to do with mental illness; the gay community has always had a lot of issues with mental illness, drug abuse, etc.  Self-destructive behaviors that would be noticed in the straight community get overlooked in the gay community.

Assume your customer is paying with a ten dollar bill, mentally drop a penny from that, (so 9.99), subtract the total from that, add a penny, and that's the change due. If they pay with a twenty, just add ten.

He was known to throw knockdown pitches to batters who'd gloated a little too much about getting a hit or homer off him previously. The batter knew it was going to come too, because Ryan had this icy cold stare that he'd fix on the hitter when he'd gotten the hit. "When he stares at you like that, you damn near piss yourself saying 'what's he going to do to me' "

God help you if your pitcher drilled one of his teammates.

Because the second you saw the denomination of the bill(s) they pulled from their wallet or purse, you could announce their change, without having to count it out. It was a fun trick. It's still fun, even in this day and age of computerized cash registers. I can pay, and announce the change due me before the clerk can mash his or her buttons.

359 No semi's in the 5x rifles? Don't know about the swiss one, never used it. All good choices. Out of the 5 rounders, the k98 is the shit. Don't know why the springfield isn't there, it's a great rifle. It maybe just me, but I prefer the Lee enfield SMLE over the #4, the sights are better. Generally cheaper, too.

Uecker said on days Gibson pitched even his teammates couldn't say hi to him. He'd get a good hate going on long before the game even started - he was even mean to his family. He'd just walk around the clubhouse glaring at everyone. Many years later, Uecker met him at Cooperstown and found Gibson to be the most gracious man, really nice to the Cards fans who remembered him and asked for autographs.

They also said that today's pitchers need to man up and not look to the dugout to be relieved when they run into a little trouble.

I remember watching those guys as a kid. Pitching a complete game was common, not a rarity like now.

Mrs. Muldoon  proudly  wants me to announce  to the Horde  that she got her CCW permit (CO).  Then she went down to the local gun shop and asked to look at some handguns.  Looking at  a Bersa Thunder .38  she  asked  one of the old guys working the counter, "How does this thing work."  Then she asked, "Does it come in any other colors?"  I like to think she was messing with them a little.

That's terrible! Our son was diagnosed with several (5) heart defects at 20 weeks. Even when they initially told us they saw an underdeveloped left ventricle (very bad), no one mentioned abortion. Fortunately, he has dextrocardia, so it is the right ventricle that's underdeveloped instead. I won't say the path to his super-duper custom heart has been fun, but the surgeries are so well-established, and so commonly performed, it would be a crime to abort because of heart defects. Today, at 10, you'd never know he had any issues - he's just a little bit shorter than his classmates.

I see a lot of pitchers get pulled when they clearly want to stay in the game. I would imagine the massive salaries star pitchers get these days is behind it. When you're paying Zack Greinke a quarter of a billion, you really don't want to risk losing that arm.

 

My uncle was a left-handed pitcher in the minors in the late '40's. I've looked up his stats online - he didn't suck. Pitched a 15 inning game and blew out his arm permanently. He was always kind of gruff and grumpy. My mother said his left arm and shoulder still hurt badly from time to time, even when he was in his 50's. It's too bad there was no Tommy Johns surgery in those days.

I own a .303 Jungle Carbine, and it is definitely hard on the shoulder, and the ears.

It's debatable. Seaver, Koosman, and Ryan pitched into their 40's. Another of their fireballing pitchers Gary Gentry blew out his arm before he was 30. However, Gentry had a violent delivery similar to David Cone's, while Seaver, Koosman, and Gentry were physically bigger and had fantastic mechanics

I was told I could either deliver him to his death, or they could pump me full of drugs and try to keep him in for as long as possible. Of course, I chose option B. My son was born about a month later, nearly as small because of his growth restriction due to lack of fluid. He spent 2 months in the hospital. "Pro choicers" told me I should have aborted him. What quality of life did he have? How much had he cost the tax payers? So much for compassion.

Yes, fireballs. It has a folding bayonet, as well, in case I run into any capitalist squirrels or imperialist groundhogs. Strongly recommended.

Yep, milsurp ammo in short barreled carbines. Using modern ammo in these rifles gets rid of the fireballs, but it's not nearly as cool.

512 Tru, I was intrigued enough to go to your website and read about Mike Sullivan.  I spent 40+ hours a week for an entire summer and fall flogging for teh Fred several years back.  One of the best things I did was to send personal (copied) emails to every last email address I could find on young Republican, college Republican clubs.  Also, google Republican lawyers, there is (or at least there was) a searchable database, by state, with email addresses.  I emailed all those bastids, too.  Best thing about it is, it doesn't cost you anything but time.  Mike sounds great, btw.  And I haven't seen the name "Seekonk" in many years, did my heart good!

A neonatologist I know says it's a miracle I survived considering there were no neonatal ICU's then. Gives one some insight about whose "choice" it is. Even if you don't believe in God, you see that these babies fighting for their lives in the NICU have a strong opinion about whether or not they want to be there.

For the life of me, I can't remember the name of the pitcher from the Ty Cobb/Babe Ruth era (Rube Waldell, I think?) who used to do cartwheels on the mound when he struck someone out. Great pitcher - and completely nuts. He loved fire trucks and when he heard one on the street, he'd run off the field to chase after it. He also loved puppies and so fans of the opposing team would bring puppies to the ballpark and hold them up, hoping to distract him.

 

 Now, wouldn't it be great to see Yu Darvish doing a cartwheel on the mound? Or RA Dickey running after a fire truck?

By the end of the 2009 post-season, he was throwing about 88mph. And I think he put in two innings in the last game of the WS.

Fans ragged on him so badly that when the Mets wives held a fashion show, Sisk's wife was booed.

Sad thing was, he was always one of the nicest people you'd want to meet

Paper was cheap/flimsy of course, but they were about 1/3 the cost of the same title at the university bookstore even when shipping was factored in.  They'd get the book list for the next semester and make a call home, and we'd be styling a week or two later.

732 Well I certainly enjoyed watching Errol Flynn and Dean Stockwell in 'Kim' on TCM.  The follow on movie 'The Boy With Green Hair,' is ugh.  Too much moralizing and stressing over the next war and Stockwell's character has his hair turn green after his grandfather talks how Spring is green.  Run away!

TPH and Dude, glad I missed 'Psycho Pass' if they failed to do a proper ending.  Besides if I want to really doubt reality there is always 'Paranoia Agent' or wondering if Pazu is really Pazu in Section 9.

I found the movie 'Kim' as pretty good.  Kim is a very keen witted boy but he has to be to survive in India.  Dean Stockwell alternating between street urchin and rebellious student in a British school, he had to have fun in the role.  And Errol was Errol, I would have loved to have seen him play Odysseus.
