40 Hi Peaches, IÂ’m trying to get my brother transferred from ME to MA. I had called the rehab/nursing home my mother was in and they had male bed open in rehab. It has to be done between Social worker and admissions. They didnÂ’t have bed for him a day later. I think they donÂ’t want him because heÂ’s too much work because he canÂ’t walk and can only use left arm. He canÂ’t get himself out of bed & into wheelchair. I am not giving up that he will not be able to walk. Our good friend talked to a nurse friend he has and she agreed that his recovery will be better and faster and more motivating if he has frequent family visiting. ItÂ’s a three hour drive to ME. 135 Thank you so much, Peaches. I called the Social Worker Friday but she had day off and I left her a VM yesterday with three suggestions for rehabs and/or long term care near me. I am a bully & I donÂ’t have to say a word most times, my face gives it away. They sent him to an acute rehab less that three weeks after his neck surgery and he was still having frequent high fevers. I found best acute rehab in MA and they wonÂ’t take him because heÂ’s already had acute rehab! I called him last night and he said he had been sick with a fever and horrible stomach ache all weekend. I donÂ’t know if they ever killed all the infections. There is no doctor there in the rehab in ME, they give him Tylenol. It may reduce the fever but why does he have a fever of 102 again? Incidentally, for the writing morons out there, there's a free jumping-off point just sitting there.

It is generally taught that there are five senses -- sight, hearing, smell, taste, and touch -- that are associated with five specific parts of the body: eyes, ears, nose, tongue, and skin.....thing is, that's what is taught and not what is.

We know already that much of taste is smell, and that you can smell without your actual nose if the naval cavity behind it, several times its size, is intact (Tycho Brahe, the astronomer, lost his nose in a duel, and wore a prosthesis....but never lost his sense of smell). We know that the skin has different neural connections for heat, pressure, and piercing -- and that some areas can sense one but not another. We know that the classic tastes -- salt, sweet, bitter, sour -- were inadequate because the tongue can also taste umami....which doesn't have an associated word in most western languages.

So, how many senses do we have? And what sensors?  And how many of them have been "lulled to sleep" in modern society, with decent sanitation, reasonable living conditions, free flowing information? What if frequently removed body parts (appendix, adenoids, tonsils, foreskin) actually exist as sensors for bizarre conditions not usually found in the world of today? And what sensors might account for my experience at Dachau and Jackhole's Auschwitz?

One of the funniest parts of sticking "umami" into cooking is that virtually every definition of umami starts with "savory." I was eliding a bit....I add "hojas de ajedrea" to practically everything, so I'm well aware of savory. Thing is, textbooks should be based on facts and make functional distinctions. I know there's a word for "transmission" in English, but I'm pointing out the omission. And, while umami is technically described, the English "savory" has been so rolled that the majority of "savory" items in English totally lack "umami".

There's also the fact that it was part of a marketing campaign for MSG for decades and historically has virtually exactly the same connotation as "savory;" a pleasant, meaty flavor. I looked it up, the company Ajinomoto petitioned the FDA to add a "fifth taste" to the official list, using the word Umami, which was part of their campaign. The FDA rejected it in the 1950s. Satureja montana -- which actually are not particularly connected with umami. Meats, broths, mushrooms, and the like, while "savory" overall, do not necessarily contain the herb. This may well be an artifact of Anglo-Saxon/Norman French in the language, but it's still there.

When English-language researchers started to document the missing taste that was sensed by the tongue, they fell upon "umami" because it was described in a straightforward way in Japanese, where the English variant was compromised.

292 Dude, it was an ad campaign. The ancestor word of savory was used to describe the glutamate-heavy sauce Garum. It's not a new idea. The word savory is attached to an herb but also a "meaty, rich flavor not salty, sweet, sour or bitter" throughout the history of the word. Also, the word "umami" historically meant exactly the same thing and was applied to MSG as part of ta-da - an ad campaign for MSG by Ajinomoto.

Placebo effect.  I have a friend who ran a Chinese place for a while, and while they professed to no MSG, the cooks put it in stuff all the time - big #6 pan of it right next to the giant wok.  No one ever complained. 

 

What you eat is part of culture, and affecting an MSG sensitivity was a sign to other members you were part of the in crowd.  Same folk probably now clamor for "umami", as it has become a signal of their preferred cultural alignment.

 

Unrelated, same friend posted something on FB in a conversation about global warming to the effect that it is not a conversation and deniers were equivalent to flat earthers and young earth creationists who posit cavemen riding dinosaurs, and I so wanted to jump in and say "believing that science is settled is, in fact, anti-science" but I resisted the temptation ...

 

There are facts, and there are people, and people's perception of facts are always colored by the prism of their cultural experiences.

And, trying to keep up -- I was well-versed in one sense of "savory" when I was growing up. It was tasty in a complex, quasi-meaty sort of way -- probably a close approximation to the umami sense of the word. But then I started cooking and wanted to enhance it.....and discovered herbs. When I looked at making broths brothier, the language had changed to "enhancing meatiness". And when I was looking at "making things more savory", it was about adding 2t instead of 1t of the herb [or adding garlic powder, which seems to enhance both].

Given this contradiction, I can well understand the researchers' drive to capture the most precise word in whatever language that describes this thing. And I can well understand the regrets in English that this science didn't wrench the word back from its fuzzy roots and odd digression. Like "khaki" sucked a Hindu word for "dust" into the language, "savory" as a synonym for "umami" got expelled out of the language for being imprecise.

English has become the predominant language on this rock because it embraces so many adhesions....but yet, there is no single English word for "chutzpah" unless you consider "chutzpah" English. "Gay" used to mean happy; "villain" used to mean "living in a villa". The tide of words ebbs and flows.

Umami was characterized as a distinct taste in 1985 [ Y. Kawamura and M.R. Kare, ed. (1987). Umami: A basic taste. New York,NJ: Marcel Dekker. ], though it had been recognized much earlier. I was around in 1985 (though not doing much cooking until later) and have some idea as to the mindset of the time. In my mind, some years later, the brothiness version of savory and the herbal version of savory were both in full bloom.
