Pre-ONT -- Summer foods
— Purple Avenger

Summer seems to really be here now. I've found I change my eating habits during the hot south FL summer days. Cold/chilled dishes seems to be the way to go.

This is my summer chilled EZ-prep "diner pasta salad" I've been grooving on for about a month now.

Rotini, about 1/3 of a can of garbanzo's, a small can of diced tomato, 1/2 a small bag of mixed frozen vegetables.

The frozen veggies can be cooked along with the Rotini's. Drain and add in the other stuff. Olives are an optional add if you have them, so is pepperoncini.

The seasoning is what makes it work.

Badia makes some stuff called "complete seasoning". Its awesome. Dump a bunch on. Also dump in a healthy dose of oregano, and some rosemary.

Can you sense the Mediterranean theme starting to show yet?

Now the secret ingredient -- Italian salad dressing. Sprinkle in enough that it'll lightly coat everything when you mix it all up.

Shove the bowl in the fridge for an hour and let it chill down before snarfing.

I pretty much live on berries (strawberries and blueberries) with dannon low-fat yogurt. I'll eat at least a pint of blueberries a day.

14 GF's parents bought a NutriBullet. Really like it but reviews said horrible customer service and frequent problems after 1 mo. Considered a Vitamix but Recent issue of Consumer Reports suggested a couple Ninja brand blenders as affordable alternatives. Ended up going with a Ninja Pulse 700W blender with some cool attachments like a dough mixer and some other thingy. It was the best rated Ninja on Amazon as far as ratio of 4-5 stars vs. 1-2 stars. $80. So far so good!

16 Low carb fruit compote and full fat yogurt on the mornings I don't feel ready for my usual 2 soft boiled eggs and 3 strips of bacon!! Tonite we're doing left over home made pizza. Tomorrow is bacon and spinach quiche! And I'm on my second glass of Gnarly Head Authentic Red Wine tonight. It's a happy thing.

21 Get some chicken breasts, preferably boneless. Cut them in half lengthwise and marinate all day in: garlic (at least 1 clove per breast), lemon (about 1 lemon quarter per breast), salt (about 1 tsp per breast) and olive oil (about 1/4 cup per breast). You can add a squirt of sriracha sauce before you mix up the marinade and pour it over the chicken. Grill and eat with a salad.

25 Provided the humidity isn't too bad, it is best to eat spicy foods, as they will help you sweat, which cools you down. So, cool bu spicy foods are best. Also, a nice cool beer is a must. When I was in New Mexico a couple of years back, I came across a Jalapeño beer that was both tasty and hot. Good stuff.

28 Easy chilled dessert--"Orange Fluff"


Mix together:

1 lb. lowfat cottage cheese

1 small box orange gelatin powder


Stir in:

1 (8 oz) can pineapple chunks, drained

1 (11 oz) can mardarin orange segments, drained


Fold in:

1 (8 oz) package nondairy whipped topping, thawed


Yum!  You can vary the gelatin flavors and/or substitute your favorite fresh fruits for the oranges.

40 I love cold pasta salads (we call it spaghetti salad in my neck of the woods), but I can't imagine making one without cucumber or pepperoni (or salami) in it. I use a lot of fresh vegetables and some sort of cubed white cheese and Thor likes slivered almonds, too, but of course the prep of all that takes the "quick" out if it. McCormick Salad Supreme is the seasoning I use, and there's a basic salad recipe on the back.

One of my favorite summer dishes...

Use the following:  1 fresh from the garden red tomato, 1 fresh from the garden yellow tomato, 1 fresh from the garden cucumber, 4 fresh from the garden small green onions.  All diced to simililar size, toss in bowl with 5T white vinegar, 1T of sugar (+/- to taste), and 1T of olive oil. Add matchstick cut carrots and radish (fresh from the garden is best).  Mix to coat everything. Chill for at least 1 hour before serving.

Real Macaroni Salad:

1 LB Dry Macaroni (shells work best)

1-2 Shredded Carrots

1 Large Onion Chopped

2 Ribs Celery Chopped

1 Bunch Green Onions

Chopped Fresh Parsley ( Couple tbsp. dried)

1 LB Boiled Shrimp Chopped

1 LB Cooked Crabmeat

Mayonnaise (Blue Plate if you got it)

Salt and Pepper to taste

Mix it all together. Best the next Day (Garnish with the Green Onion tops)

Today a fine cook served us marinated flank steak. She threw the spice rack at it, along with olive oil for a marinade, then grilled it to medium rare perfection, then sliced it up--yum!

64 Cucumbers seem to aid living in summer's heat. My fave: peeled, seeded, diced together with tomatoes, add salt or olive oil ad lib. I always peel ones I buy here in Minnesota. You don't know where they've been.

66 Here's a good one I made up.... Get some good quality skirt steak, brush with olive oil + kosher salt + cracked black pepper. Next, get a good quality ciabatta and slice lengthwise. Get some fresh spinach. Take the juice of 1 lemon, 1-2 T olive oil, dash of Soy sauce, good size pinch of sugar (to balance out the acid) + thinly sliced red onion. Crumbled, good quality bleu cheese or gorgonzola. Grill the skirt steak so it has a decent char, but not burned. Set aside for 5 or so minutes while mixing the dressing for the spinach + onion. Toss the greens & onion w/ the dressing & bleu cheese. Lightly brush the ciabatta w/ oil & briefly grill each side until lightly brown & slightly crisp Slice the the skirt steak thinly. Take bottom half of grilled ciabatta loaf, place spinach salad mixture on top, layer grilled steak followed by top half of ciabatta loaf. Slice into sandwich size portions Enjoy

67 The super sub/hoagie sandwich. I have a very simply Artisan bread that is baked when it is cool.
Split the 1 pound loaf and then spread Itallian dressing on the bread. Add whatever thin sliced meats (I like dry salami), green leaf lettuce, tomatoes, onions whatever  veggies and top with a mozzerella or provolone cheese. Wrap in saran wrap and set in the fridge over night.
Anytime you want a snack or a meal just slice like you would a regular bread loaf. Simple and no added heat in the kitchen.

Summer means ceviche for me now.  Fresh Lime Juice, fish or shellfish, a few pinches of salt, some onion, fresh chile, perhaps a few chunks of avocado.  Tortilla chips or tostadas if you have them.

 

Wash down with cervesas.

 

Can't be beat in the summer heat.

72 Here is my mom's famous shrimp salad, which nobody but she and I make. Tiny pasta, like Creamettes rings, which aren't available on the west coast, but you can substitute ricini or orzo or alphabets. The key is tiny. One pound, cooked a little under, then cooled down with cold water, and drained well. Mayo, just enough to bind, this is a sort of dry (meaning not mayonnaise-y) salad, tiny shrimp, minced onion, green bell pepper, green olives, celery. (all of these are cut tiny, and in proportion according to common sense) baby peas, grated cheddar. Salt and pepper. Srsly, you guys, it is the best summer pasta salad. I like lots of shrimp in it.

73 Step one: shoot a Flying Squid. Head shot preferred so you are not picking lead out all night. You're pasta sauce should have been cooking for three days earlier. Sauté' squid in white wine and garlic...lots of garlic is good for the heart. Add to sauce for 30 minutes. Serve over angel hair pasta...(al dente) with a nice Chianti. If your erection lasts for more than four hours call a doctor.

Sushi salad, not so much fast, but still good if you like sushi but are lazy like me.

Steam and season rice as for sushi (I like lots of vinegar on mine) and let cool in fridge. Dice about half of a tomato and a quarter to half of  a cucumber. Slice a couple of sticks of fake crab and a couple strips of nori. Mix everything together at the proportions you like and garnish with sesame seeds.

78 You can also do similar things with grilled chicken and whatever vegetables you like. The ciabattas are nothing special $3-4 at the local grocery (Giant Eagle). What's nice is grilled chicken or steak can rest for 5-10 minutes, giving you the perfect time to grill the bread. Keep an eye on the bread, as it can burn quickly if it has a bit of oil on it. I also do a chicken marinated in my favorite teriyaki (Soy Vey, found in the kosher section) w/ grilled mushrooms & onions on top of melted swiss.

79 The key to good Italian food is fresh and ripe. You do not used canned stuff (that is for winter). Now is the season of fresh. Get the best and use it. For an awesome Sicilian dish, do Pasta alla Norma. The signature dish of Catania. Basically a tube pasta al dante, with tomato and eggplant sauce. The key is adding some anchovy (a little makes a big plus), fresh basil and fennel, onions, garlic (go with the garlic flowers which are in season now), shallots. You top with a sheep milk ricotta salata, but you can substitue regular ricotta or good quality greek feta if you must. Plenty of recipes on line.

83 For Two servings.  2 links Italian sausage, cut into about 15 pieces each. .  1 TBS olive oil.  1-2 cloves fresh garlic peeled and smashed.  Optional- one can mushrooms stems and peices, drained or 4 oz. fresh mushrooms, sliced thin.  1- 9 oz bag spinach, rinsed and drained.  Salt and fresh ground pepper.

Heat a wok or large skillet pver medium high heat. .  Add oil and garlic.  Swirl.  Add sausage and mushrooms if using.  Cook until sausage is cooked thorugh.  Cut off heat, add spinach and toss with other ingredients until spinach has just started to wilt.    Portion onto warm plate.  Serve with crusty Italian bread and a glass of a crisp dry white wine for an easy one pot summer supper for two.

85 You lucky people.  Here's Dad's Cucumbers and Sour Cream.  You can put anything in the sour cream...cukes, tomatoes or french-cut green beans.  Dad added slivered onions to the cukes and beans but never to the tomatoes.

1-1/2 cups sour cream, stirred smooth
Add & stir after adding each one:
1/2 cup whipping cream
2/3 cup half & half
1 cup buttermilk
2-3 teaspoons salt
1 teaspoon sugar
2/3 cup cider vinegar
dill weed if using cucumbers

This is enough cream for a couple of pounds of veggies.

Pasta (who cares what kind)

canned artichoke hearts

Steamed Broccoli

Steamed Asparagus

Sliced black and green olives

Roasted sweet red pepper

Sauteed (in olive oil) garlic

Parmesan cheese

Robusto Italian Dressing

Grilled chicken breast optional

ground black pepper and garden basil

91 here's what I like to call (and eat lots of in the summer) "Everything and its Mother" salad. Into 1 giant bowl, add together:

2 large whole tomatoes cut up into bits

1 whole cucumber peeled and sliced

1 bag of sliced carrots

1 small or half a medium Red Onion sliced and diced

4 or 5 stalks of celery chopped up

1 can of black beans

1 can of garbonzo beans

1 can of corn

a whole bunch but not too many green olives with pimentos inside
(black olives are OK too if you don't like green ones. What kind of monster doesn't like green olives I'm not prepared to say, but hey....)

almost a whole square of feta cheese, cut into cubes. don't overdo the feta.

salt, pepper, Tabasco and garlic powder to taste. Not too much.

mix all this up, let it cool overnight and then take great handfuls of the stuff and add it to mixed greens and whatnot such as one might find in a bag of pre-made salad.

A handful of shredded cheese is optional, as is a shake or two of grated Parmesan.

Top with dressing of choice. I prefer Creamy Caesar.

Eat.

Recipe: Bachelor Chow
Ingredients
1 lb bacon
1 lb ham (steak)
1 lb sausage (preferably with jalapeno)
1 lb dried beans (I prefer black, like my assault weapons)
2 cans chicken broth
1 can diced tomatoes (preferably with chipotle,green chili, some sorta pepper)
1 tbsp black pepper
3 tbsp dried parsley
1 white onion, chopped
3 cloves garlic, chopped
2 cups rice (I prefer brown, like my women)
1 bottle good beer (like Shiner Bock or Guiness) DO NOT USE AMERICAN SWILL PISS WATER LIKE BUD OR MILLER

Beans: boil them for 3-4 minutes, cover and remove from heat for 1 to 1 1/2 hours - OR- soak overnight
Bacon: MAKE THE BACON until it's crispy crunchy, eat half (optional) and chop up the rest.
Sausage: Cook the sausage and dice it up. Dice the ham too. Small pieces.
Rice: Cook the rice but NOT in the crockpot.
Drain the beans
Put it all into a 4 qt. crockpot/slow cooker. Pour in the beer until it's right below the rim, slam the rest, throw empty bottle against wall. Cook on HIGH for 4 hours and then low for 2 hours. Serve over rice (that you did NOT put into the crockpot)

Another one from So. Fl.. super cheap if you are in foreclosure or out of work, which is fairly common here.

1 can Mexican style diced tomatoes, undrained

1 can Summer Crisp corn drained

1 can black beans drained

1 cup cooked small macaroni

salt, pepper, garlic powder, and fresh cilantro to taste

cumin is optional but good.

Chill, eat for at least two days.

One of our summer favorites is gazpacho - "a liquid side" that goes great with anything, including breakfast.  There are tons of recipes - this one has been refined over many batches.

1.5 lbs of the best tomatoes you can find (like heirloom) chopped

1 cucumber (I use hothouse cukes) chopped

1 green bell pepper, chopped

2 minced serranos with some of the seeds

1/2 small red onion, chopped

2 cloves garlic, minced

3/4 tsp kosher salt

1 slice of bread, cubed

Liquify in a blender, gradually adding 3 Tbsp of virgin olive oil in a thin stream during the final minute or so.  Press through a strainer.  Stir in 4-5 tsp of red wine vinegar and chill.

Daughter made this yummy salad last week for a school party, brought home the leftovers.  Tastes like summer!

1 small watermelon, cut into small cubes or use melon baller

1 bunch mint, chopped

1 pt. blueberries

1 box strawberries, sliced

1 small carton feta cheese, crumbled

1/2 bag fresh baby spinach

Throw all this together in a big salad bowl and at the last minute toss with this dressing:

1/2 c. oil

4 T. vinegar

2 T. sugar

1 T. worcestershire sauce

1 T. poppy seeds

Adjust seasonings to taste.

Made a fantastic grilled Argentine steak and potatoes last night for Fathers Day.  These are Bobby Flay recipes you can find on www.foodnetwork.com from his show "Barbecue Addiction."  I have never tried a Bobby Flay recipe that wasn't fabulous.  This is a chimichurri-marinated skirt steak with a red chimichurri sauce that is out of this world.  Recipes are long but not difficult to execute.  The potatoes are grilled while the steak is resting and then dressed with a grilled-lemon and pepper dressing.  Delicious!! 

 

Also I found a very cheap red wine that is perfect for summer grilling, Mirassou Sunset Red.  We drank a whole bottle of this with dinner, even gave some to our 16-year-old daughter who loved it.  It is fruity and delicious slightly chilled.

A quickie summer sandwich idea that goes with anything

Make a small salad  with lettuce, tomato, mushrooms, radishes, onions and anything else you like. Add Catalina dressing to taste and a smattering of grated Parmesan..stuff it into a small half pita, white but preferably whole wheat.Serve it up with some strawberries or watermelon et al  Simple, wholesome, delicious and kids seem to like it.
