She kept tunneling under my fence and running away- and the last 2 times she would not come when found and called.
Besides living on a truck route, there is a guy 2 or 3 blocks away known for trapping and killing cats. Suspected of dogs, too. Rumor has it at least one or more vanloads of Mexicans cruise the county and steal dogs for dogfighting. It was just too much for me. Miss the Hell out of her- she kept the late Miss Emily's Border Collie safe when I was away. But the anxiety was killing me.

I once made a duck using a recipe that called for parboiling it for a minute, then using a hair dryer on it to "open the pores" so that when I finally put the thing in the oven the fat would render perfectly.
It worked, and I'll bet it would work on a goose, but....way too much trouble.

Takeaway quote: after I fended off O-icide small talk with onesie jokes not once but several times, LIV SIL gr-r-r-randly announced, "We all have to agree that something has to change...in this country." It's the "in this country" that marks you as the eternal college freshman. Somehow one refrained from listing the many changes I might institute tout-de-suite.
I have a high ceiling in the main room (so to speak). Wife almost had to fetch the big ladder to unroll my eyeballs back down off that ceiling. And the best part? They're coming back for another dinner today! I'll just bet the cackling bitch sat up most of the night, checking over her notes to make sure she leaves no moment unblessed by her newly-acquired wisdom. Can't.Fuckin.Wait.

We are too small a community to have a RR rescue group in a hundred miles or more. Most people adopting want a cute puppy and she's 3 years old and homely as an old shoe. Animal control did agree to giving her back before destroying her if they can't place her.

My default duck recipe now is simply a very low temp roast to render as much fat as possible, then some time at a higher temp to crisp the skin.
The advantage of the low temp part is that the rendered fat is not browned, so I can just pour it into a container for later. And it's really easy.
Potatoes cooked in duck fat may be the highest and most noble expression of the cooking arts.

Y-not, I'm excited about your goose (heh). Around here, we use scrapper stuffings to regulate the grease. Tubular xylem and phloem, like lettuce shreds, orange, and onion, absorb about a gallon of grease from the inside, and then you throw that dressing away (or use it to make chest-plasters and soap). With wild duck (which tends to dryness) or pheasant, you work it the other way, and use juicy stuffing to keep the meat moist. Sometimes those remain edible. Hell, once in a while they're really good.
Presume that was a "domestic" goose? I've managed Canada a few times, but most hunters swear they're only good for jerky. They do make great jerky.

She's a wonderful animal- stronger than most men and very protective. Very loving and affectionate to anyone she regarded as "family." But the way it was going she'd have gotten killed or kidnapped. 30 years ago I provided bodyguard service when the Humane Society's Director was investigating dogfighting rings. It was "good ole boy" rednecks then. Now it's Mexicans- but still awful. Vile "sport."
I really don't know what got into her. The first time she tunneled and ran a 30 foot tree top had fallen into the yard- she panicked. After that? Who knows? I hope they can place her.
