Christmas was kind of meh with my family this year. Grandma was in the hospital for pnuemonia, one cousin was sick w ith a stomach bug and wasn't able to come down to dinner without being sick, his poor girlfriend (whom none of us had met before) was stuck with a bunch of strangers, I hope she thought we were nice.

That photo is chilling. I still cannot comprehend how seemingly normal people could commit the atrocities, murders, gassing, etc. then go home to their families at night and have dinner, see a play, etc.

Artichoke and goat cheese casserole sounds interesting, DaveA.
On Christmas Day we wound up having a very good homemade pizza, using up some great sauce I'd made and some really nice salamis we'd gotten for Christmas.
We had roast goose the next day. Served it with a gingerbread dressing and a confit of pears & shallots in balsamic vinegar.
The goose was a lot of work, but at least I didn't burn down the kitchen! I would do it again, because it is an unusual enough type of meat to want on occasion. But it's a pretty messy enterprise because of all the fat.

Food aside this Xmas was kind of subdued. The "twice a widower" aside the Monday before I had to return my rescue dog- Sasha, the Rhodesian Ridgeback- to local animal control.
She kept tunneling under my fence and running away- and the last 2 times she would not come when found and called.
Besides living on a truck route, there is a guy 2 or 3 blocks away known for trapping and killing cats. Suspected of dogs, too. Rumor has it at least one or more vanloads of Mexicans cruise the county and steal dogs for dogfighting. It was just too much for me. Miss the Hell out of her- she kept the late Miss Emily's Border Collie safe when I was away. But the anxiety was killing me.

Still in Cambodia. Where millions turned on their teachers, neighbors, parents and 2 million died in 3 years 8 months. They executed teachers, doctors, artists, musicians, any one who wore glasses, the disabled and ethnic minorities. There were a handful of show trials 30 years later. But Pol Pot was never tried.

Sorry to hear about your dog, backhoe. I knew someone who raised Rhodesian Ridgebacks and they are a whole lotta dog. I hope an RR rescue group picks her up and finds a good home for her.

For weeks now, I have quietly and smilingly commiserated with several morons' accounts of their dread of the upcoming enforced joviality with commanists, especially poor Jane. At least, I told myself, That won't Happen Here. Over the years I have efficiently (sometimes dramatically) divorced myself from "my friends," dyke sister has become a rock-ribbed repub (I think her wife did it), my dad and Her Mom are largely beyond politics, and generally agree on the large things anyway.
So what to my wondering eyes, after getting through Christmas quietly enough, but a surprise visit from LIV BIL and his born-yet-again-this-morning central casting LibWife! What a gift. What an opportunity to practice my long-moldering diplomatic skills. What a chance to observe, magisterially and with remove, the follies of the smallminded as they wend their way through their little problems. What.A.Pain.In.The.Ass.

They're coming back for another dinner today! 21? Y-not? Thank you. She's a wonderful dog but would have eventually met a bad fate running away all the time. Her owner left her here a few months while recovering from cancer surgery. Came back last January, asked "can I leave her a couple of days?" and never heard from her again. None of her contact info worked.
We are too small a community to have a RR rescue group in a hundred miles or more. Most people adopting want a cute puppy and she's 3 years old and homely as an old shoe. Animal control did agree to giving her back before destroying her if they can't place her.

Yeah, the recipe I followed was from the Red Lion Inn (in the Berkshires, for you non-NE types). Started breast side up on the stove - "steaming" covered in the roasting pan with broth. Then drain the liquid, add fresh broth, flip bird upside down and roast covered for an hour. Then flip bird right side up and roast at high heat uncovered.
So very messy.
But if you like organ meats, goose is a nice bird. To me it tasted like gizzard.
I'd do it again, but never try to do it for company.

My default duck recipe now is simply a very low temp roast to render as much fat as possible, then some time at a higher temp to crisp the skin.
The advantage of the low temp part is that the rendered fat is not browned, so I can just pour it into a container for later. And it's really easy.
Potatoes cooked in duck fat may be the highest and most noble expression of the cooking arts.

Backhoe, that's a shame. I spent Thanksgiving with a Rhodesian, and he was a magnificent beast. Lucky boy, he has a strong on-site mistress, master's a trail wrangler, and he's friends with the horses, so not tempted to roam off.
Y-not, I'm excited about your goose (heh). Around here, we use scrapper stuffings to regulate the grease. Tubular xylem and phloem, like lettuce shreds, orange, and onion, absorb about a gallon of grease from the inside, and then you throw that dressing away (or use it to make chest-plasters and soap). With wild duck (which tends to dryness) or pheasant, you work it the other way, and use juicy stuffing to keep the meat moist. Sometimes those remain edible. Hell, once in a while they're really good.
Presume that was a "domestic" goose? I've managed Canada a few times, but most hunters swear they're only good for jerky. They do make great jerky.

We have a new Christmas dinner tradition here at Casa de Muse. Started last year and it was even better this year: BBQ steak and shrimp, grilled to perfection by my vegetarian(!) daughter.

My son and his family were visiting over Christmas. He was sick as a dog, with croup and bronchitis. Missus Muldoon was being a good mom and was nursing him. Providing medications, pushing broths and Gatorade for hydration, etc. He roused from his feverish stupor long enough to tell her, "Thanks for the O-mama care!"

Our Christmas will be celebrated in January. So on Christmas night we had home made pizza. Pepperoni, Canadian bacon, red onion, fresh mushrooms. It rocked.
