Whoa there. Taco Bell isn't precisely Mexican food, but it's a perfectly respectable form of fast food. And I say this as someone who has many excellent Mexican restaurants within easy driving distance, as well as home recipes for carnitas, birria and machaca, which I then incorporate into a wide range of tacos, enchiladas, burritos, chilaquiles and tamales pretty much at will. But sometimes I'm out and about and don't have time for anything but fast food, and then Taco Bell is on the short list of options.

I would accept that as an axiom.
But for beer as a beverage, you need to be prepared for a sit-down dining experience. Drive-thru beer. Hmm...wonder why that never caught on as a concept.

No, I make those at home. It's really hard to find good home-made quality tamales, even in good Mexican restaurants, and Taco Bell certainly won't have them. That's why I learned to make them myself. And then of course I had to figure out how to make all of the stuffing ingredients, hence the machaca, birria and carnitas.
Quick story. Actually, two. First, Taco Bell is named that because the founder's last name was Bell. Second, back in the 1960's they had an item on the menu called the enchirito (pretty much an enchilada). However, it was the only item on the menu that used a soft corn tortilla, which complicated their logistics terribly. So they took it off the menu. Recently they resurrected it but with a flour tortilla. Just not the same. I really miss the old enchirito.

A good tamale is a joy forever, but for some reason, the production of tamales cannot be automated with success. The ones you buy frozen in the stores are simply terrible. Home made (either by yourself or someone else) is definitely the way to go. In the days of my youth, the best source was local Catholic Church bazaars. Or in my case, intercepting the lady across the street before she ever got to the bazaar (thank you Mrs. Montalongo). I used to have a local source at a tienda who was also very good (ironically, he always brought a tupperware container of spaghetti for his own lunch), but that place went out of business so I had to figure out how to make my own.
Now I'm getting hungry for tamales, darn it. Tragically, I'm making an Italian-style lamb shank for dinner, but somehow I will soldier on...

I am very partial to a good burrito as well. Still stuck with my "crummy old" lamb shank tonight, however. Something interesting I recently discovered: if you like the kind of Mexican dish that includes a sour cream topping or filling (which would include some styles of burrito), you can substitute a good plain yogurt and get an even tastier result.

Wagaya no Oinari-Sama? Its about these two boys who have lost their mother. Youngest brother turns out to posses strong water affinity magic so creatures are hunting for him. So his grandmother releases Kuu-chan, a nine-tail fox spirit under house arrest for being too mischievous, to act as the boy's guardian. Also Kou-chan, a strangely other worldly shrine maiden, is also sent along.
The title literally means "Our House's Fox Spirit" because Kuu moves in with the boys and their father. So their lives get complicated by dealing with supernatural creatures. Like the local kami of commerce runs a quik-stop, his assistants are fierce looking demon dogs who are truthfully some of the dumbest animals around. One episode deals with Kuu going toe to toe with a werewolf. Other kami wander in. Along with spirits and things that go bump. Even Kuu's sibling Gou gets in on the act, trying to save Kuu from the humans because Gou is angry over the imprisonment Kuu suffered.
Let it be said that Kuu at first takes on the duty to guard the boys out of affection for the boys' mother. Their mother was the only one who treated Kuu during her imprisonment as a person. So Kuu is willing to do anything and risk much for the boys whom Kuu starts to have affection for because they are so like their mother.
One of the twists this show takes with the fox spirit mythos is kitsune can switch genders at will. So Kuu and Gou switch all the time. But a lesser nogistune in the show, him and his kit can't do that.

Well, not my mother's grand-children's grandmother. G-d bless her, but my Mom was the Worst. Cook. Ever. There is a story I could tell about meatloaf topped with mustard that...sorry...I just can't go on. The memories are too painful.
Oddly enough, her mother was a great cook. RIP, Grandma Armer. She left behind a few recipes that I faithfully follow with some success, but I am still trying to replicate her chicken and fluffy dumplings. After 40 years, I'm still trying to get it right. She also made pretty good spaghetti, which she then refused to eat (she hated Italian food).

Are you sure it was feta? There is a Mexican cheese called cotija that reminds me a little of feta (salty and pungent). Just in case you ever decide to make it yourself. Queso fresco is also a little salty and an acceptable substitute for cotija, but probably not enough that you would think it was feta.

Interesting. Please understand that I am not contradicting you, but rather trying to incorporate the interesting information you are imparting into my database. The feta cheese I have encountered has always been extremely crumbly. Soft and spreadable feta has me baffled, Holmes.
I guess another question I have is: was it really goat in the tacos? I've never been that fond of goat, but could see how it might work in a taco/burrito/tamale/enchilada recipe. Previously I've always had it in a Caribbean preparation, and they seem to leave the bones in which I have never liked.
P.S. Serranos are the thinking man's jalapeños. Love them!
