10 One of these days I have to make lemon meringue pie. I just found out it's my nephew's favorite.

Posted by: lauraw at February 08, 2014 05:17 PM (yGblt)

11 I got a great lemon pie recipe from my late mother-in-law. My husband told me that whenever he came home from college, she used to make a lemon pie and a pumpkin pie. So one day I surprised him by making the lemon pie. He looked at me a bit oddly, and I thought he just figured I couldn't make a pie as good as his mother's, but finally he confessed that he didn't really LIKE lemon pie! "But you said your mom used to make you lemon pie and pumpkin pie!" "Yes, she made the pumpkin pie because she knew I didn't like the lemon pie!" I never made it again, which is too bad, because it really is a great recipe.

30 And since this is a pie thread, I must tell the famous story which every Canadian knows, even though Snopes pooh-poohs it and says it's a variation of a common story told of many people: Once, when Queen Elizabeth and Prince Philip, the Duke of Edinburgh, were travelling in Canada's north, it was thought it would be nice, at one of the dinners they attended, to have native girls in traditional costume doing the serving. So they rounded up a lot of girls from surrounding villages, and the dinner was predictably a bit of a farrago, since nobody knew fine points of etiquette like which side to serve from, etc. At one point, when they were clearing away the dishes from one of the courses, one of the girls leaned over to Prince Philip and said to him, "Hang onto your fork, Duke, there's pie for dessert." A story which he apparently enjoyed telling long after.

62 My mother-in-law was a tremendous cook. Once she and my father-in-law came down from Nebraska to Texas to visit us on their way to a winter RV park down by the Rio Grande. She would come in from their little trailer with all sorts of goodies that she somehow baked out there, and had the ingredients(!) in that tiny fridge. One of the things she prepared was a lemon merigue pie. She baked it from the ingredients she had brought from Nebraska, but I wouldn't have been able to do that with a list and three tries at the grocery store.

92 Here you go TamiÂ…. It's the true Moron Lifestyle pie crust. It contains vodka. 1 1/4 cups unbleached all-purpose flour (6 1/4 ounces) 1/2 teaspoon table salt 1 tablespoon sugar 6 tablespoons cold unsalted butter (3/4 stick), cut into 1/4-inch slices 1/4 cup chilled solid vegetable shortening, cut into 2 pieces 2 tablespoons vodka, cold (YES, you read that right) 2 tablespoons cold water Process 3/4 cups flour, salt, and sugar together in food processor until combined, about 2 one-second pulses. Add butter and shortening and process until homogenous dough just starts to collect in uneven clumps, about 10 seconds (dough will resemble cottage cheese curds with some very small pieces of butter remaining, but there should be no uncoated flour). Scrape down sides and bottom of bowl with rubber spatula and redistribute dough evenly around processor blade. Add remaining 1/2 cup flour and pulse until mixture is evenly distributed around bowl and mass of dough has been broken up, 4 to 6 quick pulses. Empty mixture into medium bowl. Sprinkle vodka and water over mixture. With rubber spatula, use folding motion to mix, pressing down on dough until dough is slightly tacky and sticks together. Flatten dough into 4-inch disk. Wrap in plastic wrap and refrigerate at least 45 minutes or up to 2 days.

97 Well, this is one of those recipes where they give you a list of ingredients and almost no instructions. I think they expect you just KNOW how to put them together. So I'll add in what I think would be the correct order of doing things. (Oh, and the recipe calls for "2 eggs", when I know it should be 2 yolks - the whites are typically used to make a meringue after.) 1 baked pastry shell For the Filling: Mix together 1 cup white sugar 1 heaping tblsp cornstarch 1/2 tsp salt (to taste) Add 1.5 cups hot water, juice of 2 lemons (about 1/2 cup) and cook over medium heat. Add 2 beaten egg yolks. Cook until thick and add a pat of butter after removing from heat. (You can add 2 drops yellow food coloring if you like.) Fill pie shell. Cool. Top pie with whipped cream (or meringue).

114 I so rarely drink hard liquor, so tonight at dinner, the waiter asks if I want a cocktail so I ask for a lemon drop martini (I had tasted the one my mom had Christmas Eve and liked it a lot).

The waiter says, "Do you have a preference in vodka?"

Now I know the names of a few decent vodkas, but of course, when put on the spot, I draw a complete blank and say, "Uhhhhh....no....uhhhh...as long as it doesn't suck."

He gives me a funny look.

I say, "Uhhhh...Ketel One?"

129 Oh, and of course, we have to have the greatest piecrust recipe ever: Sift together: 5 cups all-purpose flour 2 tsp baking powder 1 tsp salt Cut in one pound of lard, using a pastry cutter, until the mixture resembles crumbs. In a 1-cup measuring cup mix together: 2 eggs, beaten 2 tablespoons vinegar Then fill the measuring cup up to the 1-cup level with cold water. Add the liquid to the dry mixture, and blend until it makes a solid ball. (You can start with the pastry cutter, but you'll have to switch over to using your hands once the pastry starts to stick together.) If there's a lot of dry stuff left in the bowl, sprinkle in a bit more water until it all sticks together. Don't overwork the dough, or the lard will start to melt and it will be tough when baked. Chill dough until time to use. Makes enough for 3 double-crust pies. I swear, this is the best-tasting, flakiest pie crust ever. And I won a 3rd prize ribbon for my apple pie at the exhibition here in Ottawa a few years ago! Using this crust.

Are you really going to defend meringue? It's a poor mans marshmellow. It's white trash cool whip.

I am, yes. Marshmallow is sort of meringue with corn syrup and gelatin. Which of those ingredients bestowed the classiness? Cool whip is hydrogenated oil and corn syrup and a few other things. Meringue is basically egg whites and sugar and technique. It is the purist member of your triumvirate. It can have an ethereal texture, as in pie, or a crunchy-outside, creamy inside one, as in meringue cookies.

White trash Cool Whip is, well, Cool Whip.

182 I like to make at lease one homemade dessert for my kids a week; lemon meringue is great but it's a chore, and when time is tight my kidlets love lemonade pie--it tastes better than you'd think, and it takes zero time: whisk together 8 ounces of sour cream, a can of sweetened condensed milk, a tub of cool whip, and a tube of lemonade-flavor crystal light mix. (I never said it was gourmet, guys.) Smooth into a graham cracker crust and refrigerate for at least a few hours. Low-fat stuff works fine. I keep meaning to stir halved strawberries into the mix to see how that would come out, but haven't remembered to try it yet.

205 Is this some kind of racist thing? Isn't 'lemon' just code for something more sinister. What, is there something wrong with, say *chocolate* pie, or is that too Ray-Nagen-y?

206 You know, I want to show you folks how much I appreciate lemon pie. So I'm going to get my White House photographers to take a picture of me eating a slice of lemon pie.

210 Wife just told me... if your lemon meringue pie doesn't work...add an extra egg yolk. She knows what she's talking about.

211 Meringue is french for cow slobber.

212 Posted by: Tami at February 08, 2014 10:08 PM (bCEmE) Google it. I have...with no success. I probably need to go to Canada and stand by the side of the road with a sign that says "will shovel your driveway for the right mincemeat meringue pie recipe."

213 In an emergency, you can make a battery out of a lemon pie by inserting copper and zinc electrodes into the delicious tart filling.

217 A beautiful picture of a lemon pie with a very conservative crust somewhat overpowered by a left leaning meringue suppressing what looks like about 47% base lemon filling.

219 Other than Key Lime Pie, which is unique and velvety delicious, this has become my all time favorite "lemon" pie: Lemon Meringue Ice Cream Pie in Toasted Pecan Crust http://www.bonappetit.com/recipe/lemon-meringue-ice-cream-pie-in-toasted-pecan-crust With patience and time, you will die when you taste this. Imagine creamy fresh vanilla ice cream with lemony lemon curd... yum. I make the ice cream fresh, in my machine. The custard version, french vanilla ice cream (from The Right Scoop) versus the philly style. You won't regret it. And, I use my handheld torch to brown it just before serving. You can control the beauty of the browning that way. You need room in the freezer for various stages of freezing the pie, so make sure you have the room before starting. You won't need the room in the freezer once you taste one slice. It'll be gone in no time. Pure indulgence.

220 I think lemon meringue pie is much better with real whipped cream instead of meringue.

Actually the tips of the meringue are more than a little erotic.  Especially in juxtaposition to the white milky base.   And what mysteries lie hidden from the eye deep in that slice.

Best of all, no elbows.

Just sayin.
